Check out this recipe

Ingredients for 2 persons:

  • 1 small bell pepper
  • 3 tablespoons of tomato sauce (Barilla Napoletana sauce)
  • 1 can of chickpeas
  • 2 eggs
  • extra virgin olive oil
  • salt & pepper
  • a few fresh parsley leaves

Never miss a recipe:

Directions:

Slice the bell pepper and add it into a pan with a little bit of extra virgin olive oil, salt and pepper. Cover the pan with the lid and let it cook for 1-2 minutes.

Add the tomatoes sauce. I like to use Barilla Napoletana sauce because it has onion, garlic, carrots and Mediterranean herbs combined perfectly with the tasty Italian tomatoes.

Let it cook for 1-2 minutes then add the drained chickpeas.

Mix it well and make 2 wholes and put the eggs.

Season with salt and pepper and let it cook with the lid on for 1-2 minutes or until the eggs are done but the yolk is still runny.

Add a few fresh parsley leave if you want and enjoy it as is still hot.

It is not only delicious but also healthy.

Bell peppers are rich in antioxidants and vitamin C, fight the action of free radicals, prevent cellular ageing and cardiovascular diseases, are diuretic and purifying and fight the accumulation of cholesterol in the blood.

If you want to know more about bell peppers you may discover them below:

Barilla Napoletana sauce is prepared from an authentic Italian recipe made from natural high quality ingredients with no preservatives.

Chickpeas are a rich source of vitamins, minerals and fiber and help with the digestion. Furthermore are packed with plant-based proteins and are perfect also for vegetarians diets.

Eggs are part of our diet for millennia and have high quality proteins but also vitamins, minerals, omega-3 fatty acids and antioxidants. Eggs make a valuable contribution to our daily nutrient requirements. Beside being delicious, eggs help increase levels of high-density lipoprotein (HDL), or “good” cholesterol as it’s commonly known. Higher levels of HDL can help reduce the risk of heart disease.

Perfect Christmas season brunch

The perfect combination for a super easy and healthy meal.

Enjoy it!
