Hello my dear readers,
As you know by now, I’m not in the mood of taking photos of my cooking and baking this period, but these muffins were too pretty and too tasty to not take some photos and share them with you.
I am a gourmand and I love to enjoy a good food, especially when inside there’s a surprise 😉

Don’t worry, is very easy and will take only around 30-40 minutes from your time.

Servings: | 12 muffins |
Ingredients for 12 muffins:
- 2 whole eggs + 1 yolk
- 220 g mascarpone
- 100 ml milk
- 180 g sugar
- 280 g flour
- 1 tablespoon baking powder
- 90 g melted unsalted butter
- 1 pinch of salt
- 1/2 vanilla bean or 1/2 teaspoon of vanilla paste with seeds
- Chocolate chips
- Nutella
Directions:
Start whipping with an electric hand mixer the eggs in a big enough bowl with a pinch of salt until fluffy, then add the sugar and whip until you get a light and frothy mixture.



Add the mascarpone and the melted butter at room temperature.

Pour in the milk and continue to mix, add the sifted flour and baking powder.


Add the vanilla paste and also a few chocolate chips.


Mix well until all the ingredients are well combined.

Alternatively, you can perform the same operations in the bowl of the food processor, only that I don’t have it.
Grease the muffin molds or use muffin liners and pour part of the mixture inside, add the surprise, a teaspoon of Nutella, and cover with the mixture until they are all 3/4 full.


Bake in a preheated oven at 190 degrees for about 25-30 minutes, checking if it’s done with a toothpick that must come out clean.


Remove from the oven and let them cool a little bit before enjoying them.

Are perfect for breakfast with a good cappuccino or anytime of the day when you need a good recharge.


And to not forget the surprise 😉

And I did another batch of cocoa muffin with the surprise made from salted caramel chips but the result was more similar to some cupcakes without the frosting.

But the taste was super delicious with that touch of salted caramel inside.
