Hello my dear readers,
Since this week’s topic was grapes and we have seen some of their benefits and we have discovered Toscana, one of the most important wine regions in the world, today I’ll share with you a grapes cake which thought to be muffins instead π
This is an easy, fast and very soft recipe for the grapes cake, without butter or oil and without blenders or food processors. It is really simple and quick to prepare and the grapes do not fall on the bottom because of the clever dough.
This cake is the autumn cake par excellence, a cake that is prepared in this period and that is perfect for the autumn when we finally can turn on the oven and start putting on the long shirt or the first sweatshirt of the season. Here is always summer but still I pretend I’m in autumn season, as is too cool π
Let’s see the ingredients for a springform round cake pan of 22 cm:
- 300 g White (or black) grapes
- 250 g Ricotta
- 250 g Flour 00
- 180 g Sugar
- 50 g Potato Starch
- 50 ml Milk
- 2 eggs
- 1 packet of baking powder (16 g)
- Brown sugar for decoration
How to do it:
Put the ricotta, milk, sugar and whole eggs in a bowl and mix well with a spoon.
Add the sieved potato starch and flour little by little and mix all the mixture using the spoon.
Add the baking powder and mix well the dough that will result quite firm.
Wash the grapes and cut them in half or smaller pieces and remove the seeds if any.
Put half of the grapes in the cake dough and mix well.
Grease and flour or put the parchment paper in the cake pan and pour the mixture of the grape cake.
Smooth the surface of the cake well and decorate it with the remaining grapes.
Sprinkle the entire surface of the cake with brown sugar.
Cook the grapes cake in a preheated ventilated oven at 180Β° for about 40 minutes until the cake is cooked evenly, always do the toothpick test.
Take the cake out of the oven and let it cool completely before serving.
In my case, instead of pouring the dough into the cake pan I have put it into the muffin tray, following the same procedure but reducing the baking time to around 25 minutes. We are only two so I always prefer having smaller portions π In this way my neighours or work colleagues are happy too, as they get to taste it too π
Easy, fast, cheep and delicious! What are you waiting for? Start baking right now π
And always remember, you deserve it! Treat yourself well π
Iβve never heard of cake with grapes in it but it sounds interesting! ππ° My Oma makes this amazing plum cake so I wonder if it tastes similar to that? When I think of grapes I think of Italy or vineyards.
It was a first for me too π but is really delicious! I would say with grapes, the taste is a little bit more delicate than plums, but definitely both delicious π
Yes, Italy is well known for its wonderful wines and awesome vineyards!
Thank you Hilary for stopping by!
Wish you a wonderful day! π

I haven’t heard of a grape cake before either, but it sounds wonderful and looks delicious!
Me either but it is really easy and delicious π
A great post! Iβve never cooked grapes before. Maybe because Iβm too busy popping them into my mouth?!! Iβve seen them on focaccia, but never in a cake I donβt think. I am sure they help make the cake or muffin moist, so I love that idea.
Yes, I guess we all like to eat them as they are but I’ve found out that are really delicious also cooked π The dough doesn’t have any butter but yes, the grapes helps keep it moist π I was surprised too π
πππ Yummy! π
But can I use cornstarch instead of potato? I don’t have potato starch at home and I have plenty of cornstarch. π
Hi Jess, I guess nothing changes if you use cornstarch…is just helping in the consistency π
Oh! Thank you so much for the info Ribby ^^ <3
Sorry for the delay π€ͺ
No problem. I can’t make it now anyway. My son ate all the grapes earlier π
π I like your son a lot π€©π He eats a lot of fruits and veggies π
Eating seems to one of his hobby. π I’m happy he isn’t fat. Genetic from his father side. My father in law has a body almost every girl wants, he never gets fat no matter what eats. Can you believe he once admitted himself in the hospital to be a bit fatter, and they served him full-fat cream to drink for a while (I’m not sure how long), but it did not work. π I wish I have that body, then I wouldn’t need to be strict with burning calories π
That will be great indeed π Being able to eat everything but without becoming fat π
I do eat everything but I also must do a lot of work out to keep my shape ππ
wonderful
Thank you π
Looks and sounds delicious! ππΊπ

Hi Rabina,
Will give this a try & use up my grapes. Flour in short supply in the shops at present due to increased demand but hopefully will return again as did the TOILET ROLLS!
Thanks for the motivation.
Keep well β€οΈπ
