And here we are with another recipe from my journey of discovering tasty, healthy and nutritious recipes easy to make at home.

Very easy to make, great to eat and a fantastic way to introduce a new taste to your current menu.

Ingredients for 4 servings:

  • 4 baked potatoes
  • 800 g / 28 oz steamed and peeled shrimps
  • 2 tablespoons mayonnaise 
  • 180 ml / ¾ cup sour cream
  • 2 tablespoons grated horseradish
  • 1 small red onion
  • 15 g / ½ cup finely chopped dill or parsley
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 lemon or lime

Directions:

Set the oven at 225ºC / 450ºF.

Rinse, brush, wipe the potatoes, cover them in aluminium foil and bake them in the middle of the oven for about 50 to 60 minutes.

Roughly chop the shrimps, finely chop the red onion. 

Mix the mayonnaise with sour cream, horseradish and dill or parsley. 

Add the onion and shrimps to the mixture.

Divide the lemon into four wedges.

Remove the peel from the top of the potatoes, make a little hole and top it off with the creamy salad.

The addition of the horseradish it really gives to the salad a nice taste.

Potatoes are a humble staple food in our diets and are a good source of energy and micronutrients especially vitamin C that promotes also iron absorption. Potatoes are also a good source of vitamins B1, B3 and B6 and minerals such as potassium, phosphorus and magnesium, and contains folate, pantothenic acid and riboflavin. Potatoes also contain dietary antioxidants, which may play a part in preventing diseases related to ageing, and dietary fibre, which benefits health.

On the other side, shrimps are mostly made from proteins and water but also include vitamins and minerals such as: magnesium, calcium, potassium, phosphorus, copper, zinc.

As you know by now, a varied diet will help us reach the daily needs of vitamins and minerals that our body needs.
