Hello my dear readers,
And Happy 2026 to all of you.
New year, new beginnings — so let’s start with an easy recipe that feels nourishing, effortless, and quietly satisfying.
Honestly, I’m not even sure I can call this a recipe.
It’s so simple it almost feels unnecessary to write it down — and yet it’s something I come back to again and again, so I thought, why not share it with you?
This is my idea of the perfect easy lunch, snack, or any-time-of-the-day toast. It’s healthy but still delicious. Tasty, fresh, a little fancy, slightly indulgent — yet incredibly easy.
No complicated steps, no long ingredient list. Just good food, made with care.
It’s also packed with protein thanks to the cottage cheese, which makes it nourishing and satisfying without feeling heavy. One of those meals that makes you feel good while you’re eating it and after.

Ingredients (serves 1):
- 1 thick slice sourdough bread (about 50 g)
- 3–4 tbsp cottage cheese (about 100 g)
- A handful of cherry tomatoes (50 g)
- Fresh basil leaves
- Extra virgin olive oil (10 ml)
- Lemon zest, finely grated (a pinch)
- Cracked/ground black pepper, to taste
- Salt, to taste

How to do it:
If your slice of sourdough is very long, cut it in half. Place the bread in a pan over medium heat. Drizzle lightly with extra virgin olive oil and toast for about 2–3 minutes per side, until crispy and golden on the outside but still slightly soft inside.

While the bread is toasting, cut the cherry tomatoes in half and place them in a bowl. Season with salt, black pepper, a drizzle of extra virgin olive oil, and the torn basil leaves. Gently toss.

Spread the cottage cheese generously over the warm toast.

Spoon the seasoned cherry tomatoes on top.

Finish with a pinch of lemon zest and an extra crack of black pepper, if you like. Serve immediately.

A small but important note on basil 🌿
Always tear basil leaves by hand instead of cutting them.
Cutting basil with a knife bruises the leaves and speeds up oxidation, which can dull both the color and the aroma. Tearing them keeps their flavor brighter, fresher, and more fragrant — exactly what this toast needs.

Why this works
The creaminess of the cottage cheese balances the natural sweetness and acidity of the cherry tomatoes.
Fresh basil adds a soft, aromatic note, while the lemon zest lifts everything with brightness and that subtle, almost spring-like freshness that’s hard to define but easy to feel.
Black pepper brings just enough warmth to tie it all together.
Simple ingredients. Clean flavors. No need to overthink it.

🥛Why cottage cheese is good for you
Cottage cheese is often underestimated, but it’s a quiet nutritional powerhouse:
- High in protein
Helps keep you full for longer and supports muscle repair and maintenance. - Low in fat (depending on the type)
A lighter alternative to cream cheese or ricotta, without sacrificing texture. - Rich in calcium
Supports bone health and teeth. - Contains B vitamins
Important for energy metabolism and overall brain function. - Gut-friendly
Some varieties contain live cultures that support digestive health.
Paired with whole-grain sourdough, olive oil, and fresh vegetables, it makes this toast a well-balanced meal or nourishing snack.

Approximate nutrition (per serving)
- Calories: ~315–320 kcal
- Protein: ~12–14 g
- Healthy fats: from extra virgin olive oil ~15–17 g
- Carbohydrates: from sourdough and tomatoes ~32–35 g
(Simple, filling, and well-balanced.)

This is one of those meals that doesn’t ask for much — just a few good ingredients and a bit of attention. It’s the kind of toast you make when you want something wholesome but still comforting, when you want to eat well without overthinking it.

This is not a recipe meant to be followed rigidly.
Add more basil if your plant is overflowing. Use lemon zest lightly or generously, depending on your mood.
Eat it slowly, preferably somewhere sunny.

Sometimes, the best meals are the ones that remind us that good food doesn’t need complexity — just care, good ingredients, and a little time.
Nothing fancy. Nothing complicated.
Just good food, made simply — and enjoyed slowly.
