Hello my dear readers,
I know… another recipe with cottage cheese. But honestly, can we ever get enough of it? It’s such a fantastic source of protein, incredibly versatile, and somehow works in both sweet and savory dishes.

These herbed cottage cheese biscuits are proof of that. Soft on the inside, lightly crisp on the outside, and packed with flavor from dried herbs, they’re perfect with soup, for brunch, simply slathered with butter while still warm from the oven, or just as they are.

Ingredients (12 biscuits)
Dry ingredients:
- All-purpose flour – 2 cups (240 g)
- Baking powder – 1 tbsp (12 g)
- Baking soda – ½ tsp (2.5 g)
- Salt – 1 tsp (6 g)
- Sugar – 1 tbsp (12 g)
Fats & dairy:
- Cottage cheese – 1 cup (225 g)
- Cold butter, cubed – ⅓ cup (75 g)
- Buttermilk – ½ cup (120 g)
- Extra buttermilk for brushing – about 1–2 tbsp (15–30 g)
Flavor:
- Mixed dried herbs – 2 tbsp (about 4 g total)
(I used a blend of thyme, marjoram, basil, oregano & sage)
Instructions
Preheat & prep
Preheat your oven to 220°C (425°F) and line a baking tray with parchment paper.
Mix dry ingredients
In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.

Cut in the butter
Add the cold butter cubes and work them into the flour using your fingertips or a pastry cutter until the mixture looks crumbly.

Add cottage cheese & herbs
Stir in the cottage cheese and dried herb mix until evenly distributed.

Bring the dough together
Gradually pour in the buttermilk and gently mix just until a soft dough forms.
Tip: Stop mixing as soon as it comes together – overmixing makes tough biscuits.

Shape
Turn dough onto a lightly floured surface. Gently pat to about 2.5 cm (1-inch) thickness.

Cut biscuits
Use a round cutter or glass to cut out biscuits. Place them on the baking tray, slightly spaced apart.


Brush tops
Lightly brush each biscuit with a little buttermilk for a soft golden finish. Add some more mixed herbs on top if you wish.

Bake
Bake for 15–18 minutes until lightly golden on top.

Serve
Enjoy warm – ideally with butter melting into every crevice.
