Honestly, I’m not even sure I can call this a recipe.
It’s so simple it almost feels unnecessary to write it down — and yet it’s something I come back to again and again, so I thought, why not share it with you?

This is my idea of the perfect easy lunch, snack, or any-time-of-the-day toast. It’s healthy but still delicious. Tasty, fresh, a little fancy, slightly indulgent — yet incredibly easy.

No complicated steps, no long ingredient list. Just good food, made with care.

It’s also packed with protein thanks to the cottage cheese, which makes it nourishing and satisfying without feeling heavy. One of those meals that makes you feel good while you’re eating it and after.

Ingredients (serves 1):

  • 1 thick slice sourdough bread (about 50 g)
  • 3–4 tbsp cottage cheese (about 100 g)
  • A handful of cherry tomatoes (50 g)
  • Fresh basil leaves

  • Lemon zest, finely grated (a pinch)
  • Cracked/ground black pepper, to taste
  • Salt, to taste

How to do it:

If your slice of sourdough is very long, cut it in half. Place the bread in a pan over medium heat. Drizzle lightly with extra virgin olive oil and toast for about 2–3 minutes per side, until crispy and golden on the outside but still slightly soft inside.

While the bread is toasting, cut the cherry tomatoes in half and place them in a bowl. Season with salt, black pepper, a drizzle of extra virgin olive oil, and the torn basil leaves. Gently toss.

    Beautiful recipe – all my favourite things … and so easily assembled.

    I have serendipitously seen cottage cheese called for in quite a number of recipes lately. Not easy to get it here in Singapore so I think I will have to finally get going on making me some. I have heard it is not difficult to do, and I have done some research. I think it might just be worth the effort.

      Yes, not easy to find it in Singapore. When I used to stay there, I have tried a few brands and the best I could find was Bulla but not very happy with it. I’m sure making it at home, would taste much better 😉
