Sometimes, the best recipes happen when you’re just experimenting with what’s in the fridge. That’s exactly how these Golden Cottage Cheese Bites came to life.
I’m always on the lookout for wholesome, protein-rich foods that don’t compromise on taste—and cottage cheese is one of my pantry heroes. It’s packed with high-quality protein and feels like a little nutritional secret weapon, especially when you want something satisfying without being heavy.

These Golden Cottage Cheese Bites were born from that craving: soft, golden buns that are light yet nourishing, with the creamy richness of a local cottage cheese I found here in Bangkok. They’re simple, quick to make, and perfect for breakfast, a mid-afternoon snack, even alongside a fresh salad, or that one last bite with your evening tea. And the best part? You’re getting a protein boost in every bite.
As my cottage cheese has large curd, I slightly mixed it with a hand mixer to break down the curds a bit, but don’t worry if it’s still a little chunky—the dough doesn’t need to be perfectly smooth, alternatively use a cottage cheese with small curd. These buns are fluffy inside, with a lovely golden crust on the outside, slightly savory but versatile enough to go also sweet if you like.
Ingredients (Makes around 9 bites):
- 100 g cottage cheese (I used a large-curd local variety and gave it a quick mix with a hand mixer)
- 120 g all-purpose flour
- 1 tsp baking powder
- 1 large egg (around 50 g)
- 20 g (approx. 1.5 tbsp) melted/softened unsalted butter
- A pinch of salt

Instructions:
Preheat your oven to 190°C (375°F) and line a baking tray with parchment paper.
In a bowl, whisk together the cottage cheese, egg, and melted butter until smooth-ish (a little texture is fine!).

Gradually add the flour, baking powder, and salt, mixing gently until a sticky dough forms.


Scoop small mounds of dough onto your baking tray. No need to be perfect—these are rustic buns!

Bake for 20–25 minutes or until golden and puffed up.

Let them cool slightly and enjoy warm or at room temperature.

Notes
- You can easily double or triple the recipe if you want more!
- If you’re using the small curd cottage cheese, you don’t need to mix it with the hand mixer. Is enough to just mix it with the egg and melted butter until smooth.
- These bites are fluffy inside, with a lovely golden crust on the outside, and absolutely perfect on their own, but also with a dab of butter, a slice of cheese, or sweet marmalade.
These buns turned out to be the perfect mix of wholesome, protein-rich goodness and easy prep. They’re soft on the inside, with a light exterior, and the cottage cheese gives them that delicious tang and extra boost of nutrients.
