Ingredients

  • 100 g cottage cheese (I used a large-curd local variety and gave it a quick mix with a hand mixer)
  • 120 g all-purpose flour
  • 1 tsp baking powder
  • 1 large egg (around 50 g)
  • 20 g melted/softened unsalted butter (approx. 1.5 tbsp)
  • a pinch of salt

Instructions

  • Preheat your oven to 190°C (375°F) and line a baking tray with parchment paper.
In a bowl, whisk together the cottage cheese, egg, and melted butter until smooth-ish (a little texture is fine!).

  • Gradually add the flour, baking powder, and salt, mixing gently until a sticky dough forms.
    Quick Cottage Cheese Bites
  • Scoop small mounds of dough onto your baking tray. No need to be perfect—these are rustic buns!

  • Bake for 20–25 minutes or until golden and puffed up.
Let them cool slightly and enjoy warm or at room temperature.

Notes

  • You can easily double or triple the recipe if you want more!
  • If you're using the small curd cottage cheese, you don't need to mix it with the hand mixer. Is enough to just mix it with the egg and melted butter until smooth.
  • These bites are fluffy inside, with a lovely golden crust on the outside, and absolutely perfect on their own, but also with a dab of butter, a slice of cheese, or sweet marmalade.
