- 100 g cottage cheese (I used a large-curd local variety and gave it a quick mix with a hand mixer)
- 120 g all-purpose flour
- 1 tsp baking powder
- 1 large egg (around 50 g)
- 20 g melted/softened unsalted butter (approx. 1.5 tbsp)
- a pinch of salt
Preheat your oven to 190°C (375°F) and line a baking tray with parchment paper. In a bowl, whisk together the cottage cheese, egg, and melted butter until smooth-ish (a little texture is fine!). Gradually add the flour, baking powder, and salt, mixing gently until a sticky dough forms.
Scoop small mounds of dough onto your baking tray. No need to be perfect—these are rustic buns!
Bake for 20–25 minutes or until golden and puffed up.Let them cool slightly and enjoy warm or at room temperature.

- If you're using the small curd cottage cheese, you don't need to mix it with the hand mixer. Is enough to just mix it with the egg and melted butter until smooth.

These bites are fluffy inside, with a lovely golden crust on the outside, and absolutely perfect on their own, but also with a dab of butter, a slice of cheese, or sweet marmalade.
