Life Updates & Apple Cookies from Our New Bangkok Kitchen

Hello again, my dear readers! 👋

I know, I know… it’s been a while since I last published something here. Life just got a little wild — again. We’ve relocated once more (yes, again) — this time from laid-back, beachy Phuket to the buzzing heart of Bangkok! 🏝️➡️🏙️

Why the big move? Well, while sea breezes and sunsets are wonderful, we’re still very much in our working phase (read: not retired yet), and Bangkok simply makes life — and work — easier. Better connections, and fewer hours spent battling Phuket’s legendary traffic. So here we are, back to city life — and loving it (even if we haven’t really had time yet to explore much beyond the nearest places 😅 because we’ve travelled a lot these months).

And while I now have a shiny new apartment… I do not have a full-sized oven. But that didn’t stop me. I bought a small countertop one — and decided to test it out with these humble, homey apple cookies.

Apple Cookies
These apple cookies are the perfect cozy treat for when you're craving something sweet but simple. Made with crisp apples (I used Pink Lady for that satisfying crunch), a hint of cinnamon, and just a few pantry staples, they're more apple than dough—and that’s what makes them special. Lightly crisp on the outside, tender and moist inside, they come together quickly and make your kitchen smell like a hug. Whether you enjoy them with your morning coffee or as an afternoon pick-me-up, these apple cookies are a comforting bite of homemade goodness. Bonus? They don’t require any fancy equipment—just a bowl, a spoon, and your craving for something warm and nostalgic. 🍎✨

Now, disclaimer: these cookies won’t win any beauty contests. They’re rustic, a bit lumpy, and bursting with chunky apple bites. But oh, are they delicious and comforting. I used Pink Lady apples (because I’m a sucker for their crunch), and ended up with cookies that are more apple than dough… and that’s exactly how I like them.

🍎 Easy Apple Cookies

Ingredients:

  • 2 eggs
  • 1 apple (I used Pink Lady — crunchy and sweet!)
  • 50 g brown sugar (or white if that’s what you’ve got)
  • 50 g unsalted butter, melted
  • 200 g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon (optional but recommended!)
  • a pinch of salt
  • Powdered sugar for decorating (optional)

Method:

In a large bowl, whisk together the eggs, sugar, a pinch of salt, and melted butter until smooth.

Add flour and baking powder, mixing until a soft and slightly sticky dough forms.

Stir in cinnamon and chopped apple (peel it or don’t). If your apples are super sweet, feel free to reduce the sugar slightly.

Scoop spoonfuls of the mixture onto a baking tray lined with parchment paper.

Bake in a preheated oven at 170°C (with ventilation, if possible) for about 20 minutes, until lightly golden.

Optional: Dust with powdered sugar once cooled — or eat them warm, straight from the tray (no judgment!).
