- 2 eggs
- 1 apple
- 50 g brown sugar (or white)
- 50 g unsalted butter melted
- 200 g all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon (optional but recommended!)
- a pinch of salt
In a large bowl, whisk together the eggs, sugar, a pinch of salt and melted butter until smooth.
Add flour and baking powder, mixing until a soft and slightly sticky dough forms.
Stir in cinnamon and chopped apple (peel it or don’t). If your apples are super sweet, feel free to reduce the sugar slightly.
Scoop spoonfuls of the mixture onto a baking tray lined with parchment paper.
Bake in a preheated oven at 170°C (with ventilation, if possible) for about 20 minutes, until lightly golden.
Optional: Dust with powdered sugar once cooled — or eat them warm, straight from the tray (no judgment!).
