It’s been a while since I last shared a recipe, so today I’m back with a ridiculously easy and delicious cookie recipe!

Almond Flour Cookies

The other day, I had a serious craving for something sweet but still on the healthier side. The catch? My pantry was practically empty—thanks to our upcoming relocation, I’ve been avoiding stocking up on baking ingredients until we settle into our new home.

But, as luck would have it, I always have almond flour and yogurt on hand. A quick fridge raid uncovered some chocolate chips, and with a little sugar, these cookies came to life. And oh wow, with just a handful of ingredients, I whipped up some insanely tasty (and surprisingly healthy) cookies that hit the spot perfectly.

The only problem? Once you taste one, stopping at just one is impossible! 😆

So, without keeping you in suspense any longer, here it is—my super easy almond flour cookies recipe! Simple, delicious, and dangerously addictive. Enjoy! 🍪😋

Oh, and did I mention they’re gluten-free too? Perfect for anyone with gluten sensitivities—or just anyone who loves a seriously good cookie! 😉🍪

Ingredients:

  • 200 g almond flour
  • 125 g Greek yogurt
  • 40 g sugar
  • 40 g dark chocolate chips
  • a pinch of salt

How to do it:

Mix the ingredients and let the dough rest in the fridge for half an hour.

Pre-heat the oven at 180°C.

Shape the cookies with your hands and bake them for 25-30 minutes or until golden.

And there you have it! Told you it was super easy! Now go ahead, grab a cookie (or three), and enjoy every bite! 🍪😋

    These look yummy! I love baking with almond flour as it extends the shelf life of baked goods by adding fat, which helps retain moisture. I also love how almond flour adds flavour in the form of very mild sweetness (not enough to negatively affect savoury recipes), and a certain richness.
