Well, it’s time for another addition to the collection: Flourless Lemon Almond Muffins with Poppy Seeds.

Poppy seeds have always been nostalgic for me, a staple in my grandma’s baking back in the day. From poppy seed rolls to loaves, muffins, and even sweet noodles, poppy seeds have been a constant source of joy in my sweet memories. Their subtle crunch and nutty flavor add a special touch to any recipe, making each bite nostalgic and delightful. Living in Singapore, I had to put those cravings on hold because poppy seeds were a no-go.
Now that I’m spending some time in Thailand, there’s no restriction on poppy seeds—quite the opposite. You can easily find them everywhere, along with other substances, sometimes more than you’d expect. But that’s a tale for another time!
This latest creation combines the light, fluffy texture of my flourless lemon almond cake with the nutty crunch of poppy seeds, giving you an irresistible, cloud-like treat. And yes, they’re so light and delicious, stopping at just one is nearly impossible!

I followed my go-to lemon almond cake recipe, simply adding poppy seeds and baking them in muffin form instead of a cake.
