My First Baking Experiment in Phuket

Yes, it was time for my first baking experiment in Phuket! We tested the oven a while back with bread, and it came out perfect.

Now, it was time for something sweet.

Surrounded by mangoes in Phuket (which I absolutely love), I decided to incorporate them into a cake. One of my all-time favorite sweets is my flourless almond cake. So, I thought, why not combine them? Behold, the flourless mango almond cake! Let me tell you, it is divine!

I used my usual recipe (see below) but swapped the lemon for a mango, which I cut into pieces, pureed, and added to the egg yolks. And because mango puree makes the cake batter a bit softer, I upped the almond flour from 144g to 150g. Voilà! Enjoy!

I haven’t quite nailed down the perfect spot for snapping pics of my culinary masterpieces in the new house yet, but having a bit of green around sure helps.

    Your photos always make me drool. 😛 I want to taste them all. I am ready to have it whole. Is there a substitute for eggs? Also, eggs are important for baking a cake, right?

      Thank you Kritika! It’s good to see you here 😃 The eggs in this cake are basically the main ingredient ☺️ If you want to replace them I suggest you use for the egg yolks chia or flax seeds (mix 1 tablespoon of chia or flax seeds with 3 tablespoons of water per egg. Let it sit for 5-10 minutes to form a gel), or unsweetened applesauce (use 1/4 cup of unsweetened applesauce per egg), or mashed banana (replace each egg with 1/4 cup of mashed banana) and for the egg whites aquafaba (the liquid from canned chickpeas can be whipped into stiff peaks. Use 3 tablespoons of aquafaba per egg white), or Agar-Agar (dissolve 1 tablespoon of agar-agar powder in 1 tablespoon of water, whisk until it foams) or vegan meringue powder (available in many health food stores, it can be used as directed on the package to replace egg whites). However, I have never tried these substitutes so it may change the flavor of the cake completely.
