As you probably know by now, I love an easy recipe, and when I have one, I’ll make it over and over again. But, even if it’s delicious, is not always nice to eat the same thing, right? So, even if I use the same base, I always make some changes, and basically, it becomes a new recipe.
Take my muffin recipe for example. I started with a tried and true Blueberry Lemon Muffin recipe
and I liked it so much that I made it again, but I swapped the blueberries for apples and added some almond slices to create a whole new recipe – Apple Cinnamon Lemon Muffins
There’s nothing quite like starting your weekend mornings with a delicious breakfast treat. For me, that means whipping up something sweet and satisfying to go with my morning coffee. This past Friday, I was in the mood for something with a bit of a twist. I wanted a muffin that was both full of coffee flavor and had a satisfying crunch to it. So, I went back to my muffins base recipe, I replaced lemon zest and juice with an espresso shot and the blueberries with some chopped walnuts. And let me tell you, the end result was stunning. It’s amazing how a few small adjustments can create a whole new dish!





As a base recipe I have used my above Blueberry Lemon Muffins Recipe, to which I made the below changes:
- I replaced the lemon zest and juice with an espresso shot (about 30-35ml)
- I swapped the blueberries with a few chopped walnuts
- In the crumb topping I replaced the lemon zest with chopped walnuts
