I loved so much how easy it is to make these muffins dough that the other day when I craved something sweet, I immediately did a batch of muffins. I did not have blueberries, but I had apples at home, so I replaced blueberries with apples. And because, for me, there’s no sweet with apples that don’t have cinnamon, these apple cinnamon lemon muffins were born.
To add some crunch, I’ve changed the streusel a bit and added a few almond slices to the mix. Perfection!
I did everything manually, with no handheld or stand mixer, just a few bowls and a spatula, and in less than an hour, I had already eaten two super delicious muffins. With the perfect blend of tart apples, warm cinnamon, and citrusy lemon, these muffins are sure to satisfy your cravings!

The changes that I did are:
- changed the blueberries with 2 green apples that I have cut in small pieces and mixed with a bit of lemon juice and lemon zest
- for the crumb topping I added a few almond slices
- I added a bit of cinnamon in both the dough and crumb topping, because why not
