Chicken and Date Salad

Hello my dear readers,

I don’t know you, but I am a salad lover. Salads help increase the feeling of satiety without making you gain weight, and they are low in calories and rich in vitamins and minerals that are precious for the body.

This is not only a healthy salad but also a nutritious and delicious lunch, and pretty too 🙂

Chicken and Date Salad

Ingredients:

  • 600 g roasted chicken breast
  • 150 g rocket
  • 2 oranges
  • 1 pomegranate
  • 8 pitted dates
  • 30 g of almonds flakes
  • edible flowers (optional)

For the dressing:

  • juice from ½ orange
  • juice and zest from ½ lemon
  • 2 sprigs of thyme
  • extravirgin olive oil
  • salt & pepper

Directions:

Peel the oranges, eliminate all the skin, and cut them into slices. Deseed the pomegranate. Cut the dates in half and the roasted chicken breast into small pieces. Combine all the ingredients in a large bowl, add the rocket, the almond flakes, and mix.
For the dressing, mix the orange and lemon juice in a small bowl with a drizzle of extra virgin olive oil and a pinch of salt, then add the zest and thyme leaves.
Put all the ingredients on a plate, season them with the prepared dressing, complete with plenty of freshly ground pepper and edible flowers if you wish, and enjoy.

Ingredients

    In my lifetime I have had to learn over time that salad is a meal – growing up I never felt full with one – but then I never had one like this 🙂

      To feel full, need to make it a balanced meal. The greens and fruits are full of fibers and vitamins, so by adding proteins like chicken, fish or tofu, and fats from cheese or extra virgin olive oil, it becomes a complete balanced meal, that keep you full for a longer time, compared with eating carbs like rice or pasta 😉

    Ribana, this is a beautiful salad. I really like the addition of dates. Dates are a particular flavor of mine and outside of the Middle East area, I haven’t found many recipes using them.

    I could eat a salad every day and not get tired of them. I’ve only used dates in desserts, I think it is time to use them in something savory like your pretty salad.

      I’m glad you like salads! Yes, are so many ways to do them, that you can’t get bored of them 😉 Salad rice bowls are delicious too! I usually do them when I need to “clean” my fridge 😉 because they are so versatile that you can do them with whatever you have on hand 😉
