Hello my dear readers,
And if it’s Saturday is time for an all day easy but super tasty breakfast or brunch.
What I like about this dish is that it can be done with whatever you have at home, no need of any fancy or special ingredients 😉
And also everything is done in one pan, so no need to wash too many dishes 😉
Ingredients for 2:
- 2 eggs
- 6 small slices of bacon
- kinky kale
- mushrooms
- 1 English muffin
- cherry tomatoes
- extra virgin olive oil
- salt & pepper
For the sauce:
- 2 tablespoons of mayonnaise
- 1 tablespoon of mustard
- freshly squeezed lime juice from half lime
How to do it:
Start by sauté a little bit the washed kale with a drizzle of extra virgin olive oil, salt and pepper.
In the meantime, cut the mushrooms in half and once the kale is ready (it will take only 1-2 minutes as you want it to remain still crunchy) take it out and toss in the mushrooms and sauté them with another drizzle of extra virgin olive oil, salt & pepper.
Once the mushrooms are ready, take them out and add in the bacon and cook it for 2-3 minutes until is crunchy.

Your kale is ready, mushrooms are ready and bacon too. Now the only thing missing are the eggs.
Add the eggs in the pan, season with salt and pepper and cover with the lid for 1-2 minutes but not overcook them, you want a runny yolk.

In the meantime, prepare the quick sauce. Mix together the mayonnaise, mustard and lime juice.
Your breakfast or brunch is almost ready. You just need to plate.
Cut the English muffin in half and toast it. Then on each half add a little bit of sauce and add the egg and the bacon. Drizzle a little bit of sauce also on top.
Add the sautéed kale, the mushrooms and the cherries tomatoes and you’re ready to eat.


Kinky kale is high in iron and is a marvellous source of antioxidants, mushrooms contain proteins and fibre, a little bit of fat from the bacon and egg, and some carbs from the English muffin, an all in one goodnesses!
Now the only thing you need to do is to eat 😋
