Hello my dear readers,
Recently we have discovered the olives. I simply love them and I could eat them every single day!
So, here I am with another super easy, fast but super delicious dish.
Ingredients for 2 person:
- 200 g penne
- half of a medium shallot
- a drizzle of extra virgin olive oil
- 10-15 pitted Kalamata olives, or other black olives
- 1 can of tuna flakes in extra virgin olive oil (120 g)
- 20 g of freshly grated parmesan cheese
- a pinch of salt and pepper
How to do it:
Start with the sauce.
In a pan put the finely chopped shallot, extra virgin olive oil, the olives and the drained tuna, season with salt and pepper, and let it sizzle for 2-3 minutes then remove from the heat.
Your sauce is done.
Now is time to cook the pasta.
I’m using penne this time, but you may use whatever pasta you have, preferably short pasta.
Begin heating a large pot of water for the pasta. When the water for the pasta comes to a boil, add a generous tablespoon of salt and the pasta. Cook al dente, or until firm to the bite, following the cooking instructions on the package but checking the pasta a minute or two before the indicated time, you don’t want to overcook it.
When the pasta is al dente, drain and add the sauce and the grated parmesan.
Toss everything together and serve.
Super delicious!

That sounds like a lovely combination of flavors!

Love everything except the pasta, can we have more fibrous thing that replace pasta ☺️😉 Just wanted to try 😁.. Have a beautiful Week ahead ✨ 🤗 Stay careful and hygienic ✨
I only ate pasta once per week so I don’t mind it 😉 but you may also add the tuna and olives to a salad and there you go…more fibers 😉
Have a wonderful week Simon! 🤩🤩
Viola! Got the recipe 😋 Shud try this 😉✨
Enjoy it Simon! 😉

We had pasta today. Similar ingredients but with sausage slices and spinach. 😀
For this reason I love pasta…so versatile 😉 sausages and spinach is a wonderful and delicious combination 😉😋
Thanks Ribby <3. Spinach is my favorite thing to have in the fridge because it's versatile. I can have it fresh in smoothie or have it in soup and pasta 😋
That’s great! I am like this with peas 🤪🤪
