Rosemary roasted sweet potatoes

Friday is here

And because this week we have discovered the rosemary, today I’ll share with you a quick and easy, sweet and savoury, rosemary roasted sweet potatoes.

I love sweet potatoes and this is a very easy side dish made with only a few ingredients.

Let’s see what we need for 2 person:

How to do it:

Preheat the oven at 250 degrees C.

Peel and cut the sweet potatoes into cubes, then place them on a baking sheet.  Toss with the olive oil, half of the rosemary, chilli flakes, salt and pepper until well combined.  Spread in a single layer and bake for 20 – 30 minutes until tender and the bottoms of the potatoes are golden brown.

Remove from oven and cool for about 5 minutes.  Toss with the remaining rosemary, grated parmesan and more salt and pepper if needed.

Enjoy immediately!

You may use dried rosemary but the fresh one adds so much more flavour and the smell is awesome.

I like this way of cooking the sweet potatoes because the sweetness is balanced out with the sharp, woody flavour of the fresh rosemary.

Another quick, easy and delicious recipe, and to not mention how versatile these roasted sweet potatoes are. Can be served with steak, chicken, pork, or easily incorporate them into a vegetarian or vegan meal.
