Trofie with pesto alla genovese

And another week has gone, Friday already ๐Ÿ˜‰

This week we’ve discovered basil and a few benefits of using it in our kitchen and we’ve seen Genoa, the place were was borne the most well known and imitated sauce all over the world, pesto.

Pesto is derived from the Italian verb pestare, to grind or crush, and it is aย great classic symbol of Genoese and Italian cuisine.

How to make homemade pesto_Popsicle Society

You only need a few good ingredients to do it:

  • 50 g basil leaves
  • 15 g pine nuts
  • 2 small garlic cloves
  • 70 g Parmigiano Reggiano cheese
  • 30 g Pecorino Romano cheese
  • a pinch of salt
  • 100 ml extra virgin olive oil

* for around 600 g of pasta

How to do your homemade pesto:

 

First thing roast your pine nuts if are not roasted already.ย Then place the basil leaves, garlic cloves and salt into a mortar, and bash it all together, then add the roasted pine nuts and grind it with the pestle until it’s a paste. If you don’t have the mortar and pestle, you can use a food processor to blend until finely chopped. Add the grated cheese and extra virginย olive oil and mix together.

Fresh homemade pesto tastes so much better than store bought, with such a fragrant flavor. Itโ€™s the perfect way to use up your fresh homegrown basil.

You can prepare the pesto in advance and keep it in an airtight container for a day in the fridge.

This Ligurian traditional sauce is used as a delicious condiment for testaroli or trofie,ย types of fresh pasta that you can enjoy in the narrow alleys or caruggi of Genoa or in the comfort of your home.

What you need:

  • trofie pasta
  • fresh basil pesto
  • grated pecorino cheese
  • extra virgin olive oil
  • salt

The trofie with pesto alla genovese is a first course originating in the Ligurian region, very fragrant, simple to make and really a very tasty dish.

How to do it:

Cook the trofie in salted water slightly al dente and drain. Season with pecorino cheese and a few tablespoons of cooking water, then pour the pesto. Stir to mix well and serve.

      Dried fruits I’ve noticed are expensive everywhere…in Italy I guess we’re normal…here in Singapore are quite expensive and not easy to find, especially pine nuts and hazelnuts.

        Let me tell you that I hated some food most of my life because I ate it and it wasnโ€™t made the good way especially in internal school, then I discovered itโ€™s totally a different taste ๐Ÿ˜• I eat pesto but sauce is from market so Iโ€™m sure it will be totally different the way you make it ๐Ÿ˜Š๐Ÿ˜Š
        Yes maybe as you said about dried fruits, same here but it depends on the place, as kid in internal school we lived between the pines, and each day we ate pine nuts haha they were plenty and directly from trees ๐Ÿ˜

  2. Iโ€™ve always wanted to make pesto like you did, but itโ€™s my husbandโ€™s favorite food, and so I have to make blenderfuls of pesto and freeze it. I make it without the cheese, or the jars would take over my freezer space!

  4. I shouldn’t have perused all these yummy things before lunch … NOW I realize just how hungry I am. Is that cheese similar to parmesan? My food-preparation knowledge is best left to the wifey! I can test food properly though!

      Yes, it is similar to parmesan but is a little bit spicy ๐Ÿ˜‹ Parmesan’s taste is more delicate…Parmesan is from cow milk and pecorino is from sheep milk ๐Ÿ˜‰

  5. Thank you for this easy to follow recipe! Pesto is one of my favorite. Always bought it in glass. But is there a substitute for Pecorino Romano cheese? I don’t think I can find this in Norway (I’ll search though) but I’ve never seen it, so I’m wondering if there’s a possible substitute.

    1. Pecorino is a little bit spicier in taste than Parmiggiano cheese but you can substitute it without problems with Parmiggiano ๐Ÿ™‚ You will have a more delicate pesto ๐Ÿ™‚
      If you try to make it at home and eat it immediately, you’ll feel the difference between the fresh one and the jar one ๐Ÿ™‚
      Is really amazing ๐Ÿ™‚ And of course your kitchen will smell heavenly ๐Ÿ™‚
