Trofie with pesto alla genovese

Hello my dear readers,

And another week has gone, Friday already ๐Ÿ˜‰

This week we’ve discovered basil and a few benefits of using it in our kitchen and we’ve seen Genoa, the place were was borne the most well known and imitated sauce all over the world, pesto.

Pesto is derived from the Italian verb pestare, to grind or crush, and it is aย great classic symbol of Genoese and Italian cuisine.

How to make homemade pesto_Popsicle Society

You only need a few good ingredients to do it:

  • 50 g basil leaves
  • 15 g pine nuts
  • 2 small garlic cloves
  • 70 g Parmigiano Reggiano cheese
  • 30 g Pecorino Romano cheese
  • a pinch of salt
  • 100 ml extra virgin olive oil

* for around 600 g of pasta

How to do your homemade pesto:

First thing roast your pine nuts if are not roasted already.ย Then place the basil leaves, garlic cloves and salt into a mortar, and bash it all together, then add the roasted pine nuts and grind it with the pestle until it’s a paste. If you don’t have the mortar and pestle, you can use a food processor to blend until finely chopped. Add the grated cheese and extra virginย olive oil and mix together.

Fresh homemade pesto tastes so much better than store bought, with such a fragrant flavor. Itโ€™s the perfect way to use up your fresh homegrown basil.

You can prepare the pesto in advance and keep it in an airtight container for a day in the fridge.

This Ligurian traditional sauce is used as a delicious condiment for testaroli or trofie,ย types of fresh pasta that you can enjoy in the narrow alleys or caruggi of Genoa or in the comfort of your home.

I know I can be boring with so many pasta recipes, but I guess I could eat it every day and every day can be different ๐Ÿคช๐Ÿคช๐Ÿคช
Thank you very much for your kind and lovely words ๐Ÿค—๐Ÿค—๐Ÿค— It really means a lot as all I do, I do it with love ๐Ÿ’•, cooking, presentation, everything must be perfect ๐Ÿ˜‰
I know you don’t like too much pesto, but I bet you’ll want to try it! Only by feeling its aroma while cooking, you’ll want to taste it ๐Ÿ˜‰๐Ÿ˜‰
Dried fruits I’ve noticed are expensive everywhere…in Italy I guess we’re normal…here in Singapore are quite expensive and not easy to find, especially pine nuts and hazelnuts.
Weekend relax ๐Ÿ˜‰ Enjoy yours too ๐Ÿค—๐Ÿค—๐Ÿงธ๐Ÿงธ๐Ÿ’•๐Ÿ’•๐Ÿฅ‚ ๐Ÿฅ‚

      1. Same here dear ๐Ÿค—๐Ÿค—๐Ÿค—๐Ÿค—
Oh I didnโ€™t mean it this way at all ๐Ÿ™„ food is never boring especially pasta, there are millions of recipes ๐Ÿ˜Š๐Ÿ˜Š as you said, itโ€™s so right!!
You know true words as always ๐Ÿ˜‰๐Ÿ˜‰ I do love the good presentation as much as I love the food taste ๐Ÿ˜๐Ÿ˜
Let me tell you that I hated some food most of my life because I ate it and it wasnโ€™t made the good way especially in internal school, then I discovered itโ€™s totally a different taste ๐Ÿ˜• I eat pesto but sauce is from market so Iโ€™m sure it will be totally different the way you make it ๐Ÿ˜Š๐Ÿ˜Š
Yes maybe as you said about dried fruits, same here but it depends on the place, as kid in internal school we lived between the pines, and each day we ate pine nuts haha they were plenty and directly from trees ๐Ÿ˜
I remember cracking them with a stone and and eat them ๐Ÿ˜Š
Yes should be a relaxing weekend as well so enjoy yours as well ๐Ÿค—๐Ÿค—๐Ÿค—๐Ÿ’•๐Ÿ’•๐Ÿงธ๐Ÿงธ๐Ÿงธ๐Ÿฅ‚๐Ÿฅ‚๐Ÿฅ‚๐Ÿฅ‚

      2. I know what you wanted to say ๐Ÿคช๐Ÿคช
Especially for us that we like to eat, food never can be boring ๐Ÿ˜๐Ÿ˜
And yes, I think presentation is very important! We are only me and my hubby, but we always like to prepare our table properly ๐Ÿ˜๐Ÿ˜ Is part of enjoying the food I guess ๐Ÿ˜๐Ÿ˜‹
I know, when you eat something that is not properly done, you are reluctant to try it again, because you never ate the good one ๐Ÿ˜๐Ÿ˜‹ I have changed my mind several times about some foods when Iโ€™ve tried the ones made in the right way ๐Ÿ˜
I used to do the same with walnuts when I was little ๐Ÿ˜ yes, I guess depends on the place you are…๐Ÿ˜Š
Have a relaxing Sunday my dear ๐Ÿค—๐Ÿค—๐ŸŒธ๐ŸŒธ๐Ÿ’•๐Ÿ’•
And guess what? Today is finally the day! Avengers time ๐Ÿ˜‚๐Ÿ˜‚ At least as per now this is the plan for today ๐Ÿ˜‚๐Ÿ˜‰๐Ÿคช

Yes me too I changed my mind many many times! Not all people know how to cook actually ๐Ÿ™„
Yes walnuts too ๐Ÿ˜Š but never really liked it
Happy Sunday and enjoy the movie ๐Ÿ˜๐Ÿค—๐Ÿค—๐Ÿค—๐Ÿ’•๐Ÿ’•๐Ÿงธ๐Ÿงธ๐Ÿฅ‚๐Ÿฅ‚๐Ÿฅ‚

      4. Finally I have seen it and actually I’m speechless ๐Ÿ˜ถ
I guess my expectations were more higher, knowing how all the others movies were….Not bad but I would have liked more ๐Ÿคฉ๐Ÿคช
Sick vacation almost over, tomorrow back to office ๐Ÿคช๐Ÿคช
Have a wonderful family day my dear ๐Ÿค—๐Ÿค—๐Ÿ˜‰๐Ÿ˜‰๐ŸŒธ๐ŸŒธ๐Ÿ’•๐Ÿ’•๐Ÿงธ๐Ÿงธ๐Ÿงธ

  2. Iโ€™ve always wanted to make pesto like you did, but itโ€™s my husbandโ€™s favorite food, and so I have to make blenderfuls of pesto and freeze it. I make it without the cheese, or the jars would take over my freezer space!

    1. He has very good tastes ๐Ÿ˜‰๐Ÿ˜‰ I love it too ๐Ÿ˜‹ So fresh and tasty ๐Ÿ˜‹
Yes, I guess for convenience is easy to make more and freeze it but we are only 2 so is not difficult to make it fresh from time to time ๐Ÿ˜‰
Thank you very much for stopping by ๐Ÿ˜‰

  3. If nothing else catches the readers eyes, the gif is awesome. I can’t stop laughing, Popsiclesociety.
    Thanks a lot for sharing!

  4. Wow!! This recipe looks so awesome dear Ribana ๐Ÿ’•
You are really a awesome cook!! And the way you decorated it was super awesome ๐Ÿ‘Œ๐ŸŒธ
    Have a great โ›… Sunday dear โค๏ธ

    1. Yes, is less known than maybe penne or farfalle or other types of pasta but can be found I guess…
It is something different but delicious ๐Ÿ˜‹
      Thank you for stopping by!

    1. I’m glad I have introduced something new to WP world ๐Ÿ˜‰๐Ÿ˜‰
Thank you very much ๐Ÿ˜Š Very appreciated ๐ŸŒธ๐ŸŒธ it is really different using the mortar and pestle than the food processor ๐Ÿ˜‰

  5. I shouldn’t have perused all these yummy things before lunch … NOW I realize just how hungry I am. Is that cheese similar to parmesan? My food-preparation knowledge is best left to the wifey! I can test food properly though!

    1. Well there’s always a use for who knows to cook and for who test it ๐Ÿ˜‰๐Ÿ˜
Yes, it is similar to parmesan but is a little bit spicy ๐Ÿ˜‹ Parmesan’s taste is more delicate…Parmesan is from cow milk and pecorino is from sheep milk ๐Ÿ˜‰
I’m glad you like them! Are really delicious ๐Ÿ˜‹

  6. Thank you for this easy to follow recipe! Pesto is one of my favorite. Always bought it in glass. But is there a substitute for Pecorino Romano cheese? I don’t think I can find this in Norway (I’ll search though) but I’ve never seen it, so I’m wondering if there’s a possible substitute.

    1. Pecorino is a little bit spicier in taste than Parmiggiano cheese but you can substitute it without problems with Parmiggiano ๐Ÿ™‚ You will have a more delicate pesto ๐Ÿ™‚
If you try to make it at home and eat it immediately, you’ll feel the difference between the fresh one and the jar one ๐Ÿ™‚
Is really amazing ๐Ÿ™‚ And of course your kitchen will smell heavenly ๐Ÿ™‚

      1. We love homemade stuff and I believe you that it will smell heavenly (great choice of word) because the one in jars are enough to make us happy.

Thanks for the tips Ribby. I’ve been searching before for Pesto recipes but always unlucky to bump into some complicated instructions give up.

      2. I know, the one in jars are good of course but the one homemade is even better ๐Ÿ˜‰
Some people just like to make it complicated, I just like to always make it simple but never compromising on the flavours ๐Ÿ˜‰
Cooking at home must be fun ๐Ÿ˜‰ I don’t want that feeling: Oh, I need to cook again ๐Ÿ˜’๐Ÿ˜’
And most important, I don’t want to spend my day in the kitchen either ๐Ÿ˜‰
Thank you Jess and always remember to have fun in the kitchen ๐Ÿ˜‰
Wish you a wonderful Sunday ๐Ÿ˜Ž๐Ÿคฉ๐Ÿ˜Ž๐Ÿคฉ
