Three bean salad

I always keep one or two cans of beans in my pantry and when I don’t have too much time for cooking or when I’m too lazy to cook, the can of beans is very helpful.

Adding some celery, peppers, red onion and lettuce to the beans and seasoning with extra virgin olive oil, balsamic vinegar and salt and pepper is the perfect meal.

I have used a can of three beans but can use any kind of beans: cannellini beans, kidney beans, garbanzo beans…

It’s comforting, protein-rich, easy, fast and tasty! 😋

  1. Looks amazing – I love three bean salad! I recently discovered little to-go cups of it at my grocery store and I was thrilled. I’m definitely too lazy to make my own most days, so it’s a perfect cheat to grab one of the cups and go!
