The cookies with apple filling are shortcrust pastry biscuits that contain an apple filling inside. They are very famous because they are marketed in Italy and in some overseas countries by Mulino Bianco.

I tried to replicate these cookies with apple filling at home. Try my recipe with confidence and enjoy delicious and genuine cookies at home.

FOR THE SHORTBREAD:
- 250 g flour
- 1 egg
- 100 g sugar
- 100 g butter
- 6 g baking powder
FOR THE APPLE FILLING:
- 2 apples
- 50 g orange marmalade
- 30 g butter

Step-by-Step Instructions to Make These Cookies with Apple Filling Easily at Home:
With the electric whisk, whip the sugar with the soft butter until you get a nice puffy and frothy mixture.

Add the egg and mix it with the butter, then add gradually the flour sifted with the baking powder. Knead until the mixture is smooth and homogeneous.


Shape the dough into a ball, wrap it with cling film and let it rest for 30 minutes in the refrigerator.

Meanwhile, peel the apples and core them. Then cut them into cubes and put them in a pan with the butter and orange marmalade. Cook over low heat for 15 minutes. Once cooked, mash a little bit a few apples with a fork.


Take the dough and roll it out to a thickness of 2-3 mm. Cut many discs with a diameter of about 5 cm using a pastry cutter or a glass.

Take a disc of dough and place a small spoonful of apple filling in the center, then close it by overlapping another disc and sealing the edges well with your fingers. Wet the ends with a bit of water to make the edges adhere better if needed.
Arrange the cookies on a baking sheet lined with parchment paper and bake at 180°C for about 15 minutes.
