To start our weekend in a better mood, let’s try a super easy homemade plum cake that will be perfect with your coffee or tea in the morning or anytime during the day when you crave for something good.

Ingredients for a springform cake pan of 24 cm:
- 180 g flour
- 180 g brown sugar
- 100 g soften butter
- 125 ml milk
- 1.5 teaspoon baking powder
- 1 big egg
- 1 teaspoon of vanilla bean paste or half of a vanilla bean seeds
- a pinch of salt
- 2-3 plums
- sliced almonds for decoration
Directions:
Preheat the static oven at 180° or if you use convection oven at 160°.
In a bowl, work the soften butter a little bit then add the brown sugar and mix until you have a rather creamy mixture.


Add the egg, a pinch of salt and vanilla bean. Mix everything until the mixture is airy and creamy.


Sift in the flour together with the baking powder.

Add slowly the milk and stir to mix well until there are no more lumps.

Pour the mixture into the springform cake pan previously greased with a little bit of butter and dusted with flour.

Slice the plums and put them on top, then add the sliced almonds.

Bake for 40 minutes and your plum cake is ready.
