My Super Easy Caesar salad

Hello my dear readers,

What do you have usually for lunch?

Me, I always go with a salad for lunch, especially during the week. It is nutritious, healthy and it doesn’t make me sleepy, so I can do my work 😉

My colleagues that usually eat rice at lunch, here in Asia rice is the main ingredient of any meal, they are very sleepy after lunch 🤪

Today I’ll share a very simple salad with only a few ingredients but so healthy.

I know you are very familiar with Caesar salad right?

Did you know that the salad’s creation is attributed to restaurateur Caesar Cardini, an Italian immigrant who operated restaurants in Mexico and the United States?

He invented the salad at his restaurant Caesar’s (at the Hotel Cesar) on a Fourth of July when he’s kitchen was left with no supplies. Cardini made the salad with what he had: lettuce leaves, which were meant to be lifted by the stem and eaten with the fingers, coddled eggs and Italian olive oil, adding the dramatic flair of the table-side tossing “by the chef.”

Most of the time, the good recipes come using ingredients that we have on hand and lots of imagination 😉

Well, maybe my salad doesn’t have nothing to do with the original variant of Caesar salad, but if you are a salad lover you should definitely try it.

Why I’ve called it Caesar salad? Because it looks very similar to it but it has my twist 😉

Let’s see the ingredients for 2 persons:

For the salad:

  • 200 g romain lettuce
  • 200 g iceberg lettuce
  • 50 g shaved parmesan cheese
  • 200 g grilled chicken breast
  • multigrain bread croutons made from 2 slices of bread

For the dressing:

  • 2 tablespoons of mayonnaise
  • 1 teaspoon of mustard
  • lime juice of half lime
  • black pepper

How to do it:

  1. Cut, wash and dry the salad.
  2. Cut in small pieces the grilled chicken breast.
  3. To make the croutons: cut in small cubes the slices of multigrain bread and roast them in a pan with a little bit of extra virgin olive oil, salt & pepper for around 2-3 minutes.
  4. Prepare the dressing: mix together the mayonnaise, mustard, lime juice and black pepper until you obtain a smooth cream not too liquid.
  5. Put everything together: the salad leaves, the chicken breast, the shaved parmesan and the croutons, season with the dressing and here you go, your Caesar salad is ready to be enjoyed.

Very simple, tasty and healthy with a super delicious but light dressing.

Tips: 

When you grill chicken breast you may grill more and keep it in the fridge for even a week. In this way you have it ready and can get creative and use it in different ways in no time: in salads, sandwiches, as a main dish with some veggies…When you are in a rush, you still can enjoy a healthy meal 😉

My Super Easy Caesar salad

A very simple, tasty and healthy salad with a super delicious but light dressing.

Ingredients

    For the salad:

    Did you know that the origin of the caesar salad came from a chef caesar in mexico. Cant remember the date, but did a dang report on in when I was in culinary school.
