Hello my dear readers,
Since this partial lockdown started also in Singapore from 7th of April (I say partial because we still can go out for work, groceries and to the park if we want), I thought now is a good time to use whatever we have in the pantry, avoiding going out for groceries as much as we can.
Our pantry is pretty small and I don’t like to keep stock but when we’ve been back home for Christmas last year, we’ve received a pack of home made truffle fettuccine pasta and we did not use it so far, and some time back I’ve found and bought a jar of artichoke paste.
Truffle pasta and artichoke paste…hmmm….why not? 😉
The result?
Well my dear friends, a fancy 5 Michelin star pasta dish, made at home in no time 😉
Ingredients for 2 persons:
- 125 g truffle fettuccine
- 2 tablespoons of artichoke paste
- grated parmesan and pecorino cheese
- truffle slices (optional)
How to do it:
Cook the pasta according to package instructions making sure to keep it al dente.
Drain it but keep aside 2-3 tablespoons of cooking water.
Add the artichoke paste, the grated parmesan and pecorino cheese and the cooking water and stir well.
And because my husband is a truffle lover, from a previous trip back home, I’ve brought a small jar of truffle slices and I’ve added a few on top of the pasta.
The fancy 5 Michelin star dish is ready to be enjoyed!
I was thinking that the truffle will overcome the artichoke taste but nope, the two flavours combined so well together while the textured surface of the pasta helped to absorb the artichoke sauce very well.
And you know a funny fact? Here in Singapore we could have such a dish only in a fancy restaurant and the cost for 2 persons including a glass of wine will be around S$ 100 (US$ 70) and at home it is around S$ 16 (US$ 11).

Truffle fettuccine pasta with artichokes paste

A fancy 5 Michelin star pasta dish, made at home in no time
Ingredients
- 125 g truffle fettuccine
- 2 tablespoons of artichoke paste
- grated parmesan and pecorino cheese
- truffle slices (optional)
Directions
- Cook the pasta according to package instructions making sure to keep it al dente.
- Drain it but keep aside 2-3 tablespoons of cooking water.
- Add the artichoke paste, the grated parmesan and pecorino cheese and the cooking water and stir well.
