Tasty and Easy Stuffed Peppers

Hello my dear readers,

And since this week, we’ve discovered the peppers, today let’s try a super delicious recipe: stuffed peppers.

I love stuffed peppers and this is a very simple recipe. It will take a little longer to cook than my usual recipes but is well worth it.

Stuffed peppers are a delicious and substantial dish that knows many variations, one more appetizing than the other: from the vegetarian one, stuffed with a mix of seasonal vegetables, to the one with rice or quinoa, which becomes a rich and tasty single dish.

The peppers, thanks to their shape, are easily transformed into tasty containers to be filled with a delicious meat-based or veggie mixtures.

Cooking in the oven will ensure that golden and crispy crust on the surface that will make your mouth water just looking at them!

Simple ingredients but with a squisite taste.

Ingredients for 2 big peppers (4 half):

  • 250g ground meat (beef and pork preferably)
  • 1 egg
  • 2 tablespoon grated parmesan cheese
  • 1 tablespoon breadcrumbs
  • salt & pepper
  • fresh parsley for garnishing (optional)

How to do it:

Preheat the oven at 180 degrees.

Wash, dry, cut the peppers in half, take out the seeds and place them on a baking dish.

In a bowl put the ground meat, the egg, half from the grated parmesan cheese, breadcrumbs, season with salt and pepper and mix well.

Spoon the mixture into each pepper and top with the remaining parmesan cheese.

Cover the baking dish with foil.

Bake until peppers are tender, about 40-45 minutes. Uncover and bake until cheese is bubbly, 10-20 minutes more.

Garnish with parsley before serving.

Advice:

To keep the filling moist I recommend using also pork meat instead of using only beef and also instead of breadcrumbs, you can use stale bread soaked in milk and then  squeezed the milk out.

You can cook them ahead and keep them in the fridge for 1-2 days.

I don’t recommend to freeze them though.

    My God, that looks super delicious water on my mouth already. I will definitely try this, I am a big fan of Beef and Pork, post lock down this is going to be my try on the first weekend. It’s very creative, I have never seen like this, here in south these kinds will never come out. Thanks for this beautiful dish today.       Thank you very much Simon! I’m really glad you like them! This is a variant with meat and beef and pork combination I think is the best 😉
      However, who doesn’t like meat can make them vegetarian with veggies, rice or quinoa…😉 Others makes them with cheese….I love them in all ways 🤪

    These look so delicious, and I’m sure you can make this with a meat substitute for a vegetarian dinner. My mom used to make these all the time, especially when the peppers started coming in all at once in the garden!

    Always a favorite no matter what they are filled with. The red, yellow and orange peppers have a much sweeter taste than the green.
