Are you ready for another dose of healthy and nutritious meal?
Today I have another super easy, fast, delicious and healthy salad recipe made with only 5 ingredients.
Ingredients:
- baby spinach leaves
- walnuts
- Greek feta cheese
- dried Goji berries
- Kalamata pitted olives
Seasoning:
- extra virgin olive oil
- balsamic vinegar
- salt & pepper
How to do it:
Wash and dry gently and carefully the baby spinach leaves.
Roast the walnuts in a pan over medium high heat for around 3-4 minutes.
The dried Goji berries can be used as they are or soaked for just a few minutes in tea or simply hot water. I usually soak them in green tea.
Cut the Greek feta cheese in small cubes.
Now all you need to do is put everything together, season with extra virgin olive oil, balsamic vinegar, salt & pepper and enjoy.
The antioxidant properties of the spinach, the protection against flu and boost of the immune system of the Goji berries, the anti-inflammatory properties of the walnuts, the benefits for the bone health from the Greek feta cheese, the good source of fibre from the Kalamata olives make this salad not only delicious but also a super food.
