Mixed leaf salad with grapefruit and roasted seeds

A light, refreshing and citrusy salad made in no time.

Ingredients:

How to do it:

Cut the slices of bread into cubes and toss them with a drizzle of extra virgin olive oil, salt, pepper and add the seeds too. Toss them on medium-high heat for around 3-4 minutes or until the bread is crunchy.

Wash and dry the salad leaves. Is very important to dry the leaves otherwise even with a little bit of water on your leaves the dressing will slide off and pool at the bottom of your bowl, where all that extra liquid will make the whole salad go soggy and limp faster.

Wash, dry and cut the radishes.

Peel and cut the grapefruit in segments. Easy to say but pretty difficult to do right?

Don’t worry is not so difficult…start by slicing off both ends of the grapefruit, set it on a cutting board and slide a sharp knife along the edge of the peel, exposing the flesh, working all the way around the grapefruit. Now it’s time to cut out the segments! Slide your knife along the membrane of one section, then the adjacent membrane of the same section and pop the section out. Easy!

Croutons ready, salad leaves dried, radishes ready, grapefruit segments ready, now just need to put everything together, season with salt and pepper and drizzle with a good extra virgin olive oil and balsamic vinegar.

Your colourful, refreshing and healthy lunch is ready!

I simply love the crunchiness of the croutons, the roasted flavour of the seeds, the citrusy taste of the pink grapefruit and the freshness of the salad.

For me is the perfect combination!

  • 4-5 radishes
  • seeds (sunflower seeds, sliced almonds)
  • 1-2 slices of bread preferably wholegrain with seeds
  • 1 pink grapefruit
  • salt & pepper
  • extra virgin olive oil and balsamic vinegar
