Ready for another super easy recipe?
Here we go:
Couscous with chia seeds, veggies and shrimps
A super healthy and delicious meal 😉
Ingredients for 2 persons:
- one zucchini
- one red pepper
- two carrots
- zest from one lime
- salt, pepper and a little bit of butter
- 250 g shrimps
- half cup of couscous
- half cup of hot water or broth
- 1 tablespoon of chia seeds
How to do it:
Wash and cut the veggies in small pieces but not too small as you don’t want them to become purées.
Sauté the veggies in a pan over medium-high heat, with a little bit of butter, water, salt & pepper and let them cook until just starting to wilt, for around 10 minutes with the lid on.
In the meantime wash and steam the shrimps for around 2 minutes. I like to use the ones with the tails on. Once done, add them to the veggies.
Add the lime zest and stir everything together over a medium-high heat for another 2-3 minutes.
Prepare the couscous. I use a ratio of one to one but I recommend to follow the instruction from the package.
In a bowl add half cup of hot water or broth if you wish, add the couscous, the chia seeds, stir well, cover, and let the couscous steam for 2-3 minutes. When you lift the lid, the grains will appear flat in an even layer. Use a fork to fluff it up and break up the clumps for light and fluffy couscous.
Now all you need to do is plate everything and enjoy it 😉
