And because this week we have discovered the carrots and their benefits, now it’s time for another super easy but healthy recipe.
Today let’s do the Camille.
The camille are soft muffins with carrots, almonds and orange juice, a concentrate of vitamins perfect for every moment of the day.
They are an easy dessert to prepare with healthy and genuine ingredients and therefore very suitable for everyone’s breakfast.
Preparation time: 10 minutes
Baking time: 20 minutes
Ingredients for 18 muffins:
- 250 g of grated carrots
- 80 ml of sunflower oil or your preferred seeds oil
- 100 ml of orange juice
- 200 g of icing sugar
- 3 eggs at room temperature
- 100 g of almond flour or ground almonds
- 200 g of flour
- 1 sachet of baking powder (16 g)
- 1 orange zest
- 1 pinch of salt
How to do it:
Start by shredding the carrots.
Then put the grated carrots in the mixer with the oil and orange juice and blend them until reduced to cream.
In a bowl, whisk the eggs with the sugar very well until they become whiter, add the almond flour, orange zest and a pinch of salt and mix well.
Add the carrots cream to the mixture and, stirring constantly, add the flour previously sieved together with the baking powder.
Pour the mixture into the muffin molds.
Bake in a pre-heated oven at 180 degrees for about 20 minutes. Before taking out the camille, do a toothpick test which must come out dry.
Enjoy your healthy and genuine Camille at breakfast with coffee or tea or anytime. Oh and their colour…is so beautifully orange 😉
You may also make them gluten free, by simply replacing the flour with a gluten-free flour.
You may keep them soft for up to 4 days tightly closed in a food bag.
In my case, it will not last for so long 🤪
