Soft Almond and Orange Cookies

Ready for super easy but delicious cookies? Here they come

These are tasty, light and soft cookies that you can prepare in a really easy and fast way and with only a few ingredients!

  • Difficulty: easy
  • Preparation: 10 minutes
  • Resting time: 1 hour
  • Baking: 25 minutes

Ingredients for 20 cookies:

  • 150 grams of almonds
  • 200 grams of flour
  • 2 medium-sized eggs
  • peel of 1 orange
  • 130 grams of butter
  • 100 grams of icing sugar
  • 1 sachet of vanillin
  • a pinch of salt
  • 8 grams of baking powder
  • 20 grams of white granulated sugar

How to do them:

Start with the almonds. Take the mixer and finely chop the almonds until seems like flour. I don’t have a proper mixer so I chop the almonds first a little bit and then I put them in the mixer, otherwise my mixer cannot make it 😅

Pour the almond flour into a bowl together with the other flour, vanillin and diced butter and mix well all the ingredients.

Finely chop the orange peel and add into the mixture together with the baking powder, 80 g of icing sugar, a pinch of salt and the eggs and mix until you get a homogeneous and compact mixture.

Put the dough into a plastic wrap and put it in the fridge to rest for about an hour.

After the rest time, take two bowls: in one put the granulated sugar and in the other the remaining icing sugar.

Now take the dough, remove a piece and form a ball of a couple of centimeters. Pass the ball first in the granulated sugar and then in the icing sugar, then place it on a baking sheet covered with parchment paper. Continue until all the dough is finished.

Bake in a preheated oven at 180°C for 25 minutes or until are golden, then take out the soft almond and orange cookies and serve.

Are really delicious for breakfast, tea or coffee time or any time 😉

You may also make them more Christmasy and instead of making the balls you may cut them with Christmas themed cookies cutter and offer you or your guests truly unique cookies.

Note:

When you place the cookies on the baking sheet I suggest to keep a little space between them because during baking they tend to increase in volume a little bit and putting them too close you could end up with two or more cookies attached.

You can keep the soft almond and orange cookies in a tin box for a couple of days.

        My list of allergies seems to grow all the time. I have Celiac so need to be gluten free. Also dairy free, very little spices, most I can’t have at all, even a lot of fruits I can’t have, no nuts, though I can have Brazil nuts and peanuts (though not a lot).😀😺

        Oh my…not easy with so many restrictions 😊 I hear pretty often now about Celiac, I guess is pretty difficult but luckily nowadays there are quite a lot of products gluten free…😞
        Dairy free…I’ll be at loss without dairy..🤪

        Unfortunately it’s difficult to get gluten free foods here so I mostly have to order online. Yes, I think dairy free was harder for me to get used to than gluten free!😂😹🍦🍨

        I am going to try baking gluten free bread since the only place here that sold them stopped and won’t bring it back since they didn’t sell good. Guess not enough people here want gluten free. I was never good with baking regular bread so this might be quite a challenge! But I will try anyway.😂😹🙄

        I will do that, using gluten free flour is tricky, can’t just use the same amount, usually have to do less, but it depends on what I’m baking.😀👨‍🍳👨‍🍳

        Honestly I’ve never tried…I know is different then the normal flour…like the wholemeal one…is more difficult to make it stick together 😉😊

        That’s the same with the gluten free flour. My last batch of cookies just fell apart into crumbs because I added a little too much flour. I could tell right away before baking that it wouldn’t work but I was hoping the pieces would be a bit bigger than they were!😂😹🙄
