Beetroot and feta cheese salad

Hello my dear readers,

I am a salad lover and to be honest I eat it everyday but sometimes can be boring so I always like to try new combinations.

I love beetroot. From when I was a little girl I loved beetroot salad. Honestly I’ve always been a little bit “strange” compared with the other kids. While they liked sweets and cakes and cookies, I always preferred salted and pickles πŸ˜‰

Today I’ll share with you a super easy, delicious and healthy salad for when you want to try something different.

Ingredients:

  • medium beetroots raw or already cooked
  • creamy feta cheese
  • mixed leaf salad
  • lemon juice and zest
  • extra virgin olive oil
  • salt & pepper

How to do it:

If you have the fresh beetroots, boil them on medium heat for 45 mins or until it can be easily pierced through with a knife andΒ peel the skin off.

I don’t find here the fresh beetroots, only the ready-to-eat, which were already boiled, so you may easily use these ones instead.

Prepare a vinaigrette from the lemon juice, zest, extra virgin olive oil, salt & pepper.

Chop the beetroot into cubes and do the same with the feta cheese.

Roughly chop the mixed leaf salad.

Combine beetroot, feta cheese, salad with the lemon vinaigrette and serve.
