Perfectly creamy polenta

I love polenta. This low fat, salt and sugar wholegrain it’s so versatile that can be enjoyed with all kinds of meats but also vegetables or cheese.

When I was little, my grandma used to do it and serve it with fresh milk or home-made yogurt. Was one of my favourites πŸ˜‹

For a creamy polenta I use a ratio of 5 parts of water to 1 part of polenta.Β Bring the water and 1 teaspoon salt to boil in heavy large saucepan and start gradually whisking in the polenta. Keep your eye on it, don’t lose sight as is very important to whisk constantly until mixture is smooth and begins to thicken. Reduce heat to medium-low and cook until tender and thickened but still creamy, stirring often, about 10-15 minutes or until polenta is soft. Stir in butter and grated Parmesan cheese. Season to taste with salt if needed.

This time I’ve served it with chicken in tomato sauce.

Poor ingredients but wonderfully rich taste πŸ˜‹

    1. Exactly. Polenta is made from ground yellow corn and grits are made from white corn 😊 So basically is the same only that has different colour ☺️
