Warm baby octopus and potato salad

Ready for another super easy but delicious recipe? If you like potatoes and if you like octopus, then this recipe is for you 😉

The warm octopus and potato salad is a dish that never goes out of style, a dish that exalts Mediterranean flavours with simplicity. Tender pieces of octopus and potatoes, fragrant and fresh parsley and finally the aromatic touch of a lemon that flavour this full-bodied salad, so rich and nutritious. Excellent to taste in all seasons when you fancy a simple and tasty fish dish.

How to do it:

Start by cleaning and boiling the baby octopus, around 25-30 minutes. Once cooked, cut it in small pieces.

Then boil or steam your potatoes. I prefer to steam them in the microwave as is much faster. I usually don’t peel the potatoes, as we have seen, their peel contains fiber, flavonoids, antitumor properties and other nutrients, but if you don’t like it, you may just peel them.

For potatoes salads use white, Yukon Gold, Red Bliss, New or Fingerling potatoes, as are the best in retaining their shape. I have used Yukon Gold potatoes. Avoid using starchy potatoes, like Russets, which have a tendency to fall apart during cooking.

Once both the potatoes and baby octopus are ready, mix them together, add the fresh chopped parsley, extra virgin olive oil, lemon juice and season with salt & pepper and that’s it, your warm baby octopus and potato salad is ready to eat!
