My kind of chili con carne

I had a few black eyed peas at home so I’ve decided to cook them today. Unfortunately I was too distracted and were way too salty. In our house we don’t waste anything, so I needed to find a way to make them edible 🤪

Then, like always, my husband is the one full of ideas, actually he is the master chef in our kitchen and I’m the sous chef 👩‍🍳  he’s for the food, I’m for the baking 😊  came with the idea to make chili con carne and use my too salty black eyed peas.

In a saucepan, I’ve put finely chopped onions and carrots with extravirgin olive oil and I’ve cooked them for around 3-4 minutes. I have added minced beef, tomatoes sauce, NO salt obviously 🙄 😊 a little bit of pepper, paprika and chili flakes and I let it simmer for around 20-30 minutes. Once ready I’ve added the cooked black eyed peas.

Our chili con carne was ready. And of course everything goes well with a Corona, “La Cerveza Mas Fina”. What a great dinner we had 😊 and the most important nothing was wasted 😉
