My Italian kitchen: fast, easy and healthy zucchini au gratin

This week we have seen a few benefits of zucchini, we have discovered Padua so now I want to share with you my really fast, easy and healthy recipe for baked zucchini au gratin.

These zucchini au gratin are the proof that healthy food can also be tremendously greedy.

It is a simple and quick recipe, which requires easily available ingredients.

To make it you just need to cut the zucchini into slices, sprinkle them with a mix of breadcrumbs and all the freshness of parsley. After a few minutes in the oven, they will be ready to be enjoyed still warm or at room temperature.

The zucchini au gratin are very easy to prepare, even for those who do not get very well in the kitchen, like me 🙂

A very simple dish. Zucchini like this are really good, they keep all their original taste and will be much appreciated by everyone in the family, from the oldest to the youngest of the house!

You will need only a few ingredients:

How to do it:

Wash the zucchini and remove the ends. Cut into slices and place them on absorbent paper.

In a bowl mix the breadcrumbs, chopped parsley, extra virgin olive oil, salt and pepper and mix well. The consistency need to result a little bit wet, similar to wet sand.

Cover a baking pan or the baking tray with baking paper then spread the zucchini slices over it and cover with the breadcrumbs mixture.

Bake the zucchini in the pre-heated oven at 180 ° for about 15 minutes, then switch to grill mode for another 5 minutes or until they are browned. Serve hot or, if you prefer, at room temperature.

And voilà! Done!

The zucchini au gratin are a classic and much-loved side dish that goes well with several main courses, but that some people like me, even enjoy it as a main dish.
