  • 150 g (3/4 cup) sugar
  • 1 large orange, zest, and juice
  • 120 ml (1/2 cup) extra virgin olive oil or vegetable oil
  • 300 g (3 cups) almond flour
  • tsp almond extract (or orange extract), optional
  • ½ tbsp baking powder
  • 1 pinch of salt
  • sliced almonds and powdered sugar for serving

Instructions
 

  • Prepare your 19 or 22 cm (7 1/2 or 9-inch) round springform pan by either lining it or greasing it lightly. Preheat your oven to 180°C (350°F) to ensure it's ready when you need it.
  • In a spacious bowl, combine the sugar and egg yolks (setting aside the egg whites in a separate bowl). With the aid of a hand mixer or by hand, beat the mixture until it transforms into a light and foamy consistency.
  • Introduce the delightful flavors of orange zest, orange juice, oil, and almond extract (or orange extract if preferred) if you choose to include them in the recipe. Continue beating the mixture for two more minutes, ensuring all the flavors meld beautifully.
  • Now, gently fold in the almond flour and baking powder until everything is well combined.
  • In a separate bowl, whip the egg whites with the pinch of salt until they reach a firm consistency. To maintain the airiness and softness of the batter, start by adding a small portion of the beaten egg whites (about a fourth) into the cake batter. Utilizing a spoon or spatula, delicately incorporate the egg whites by moving around the edges of the bowl and folding them into the middle. Continue rotating the bowl to blend them evenly.
    Gradually add more of the beaten egg whites to the batter while carefully folding them in. This technique ensures that the egg whites remain intact, contributing to a light and airy batter.
