- 2 large, very firm and hard pears
- 170 g flour
- 30 g unsweetened cocoa powder
- 150 g sugar
- 70 g sunflower oil or melted butter
- 2 eggs
- 125 g white yogurt, at room temperature
- 130 g dark chocolate, in pieces or chips
- 20 g salted caramel chocolate chips
- 1 tsp vanilla extract
- 16 g baking powder
- a handful of walnuts
First of all, whip the eggs, sugar, and vanilla extract for 2 minutes with a handheld or stand mixer until the mixture becomes frothy and clear.
Add, constantly whipping the oil a little at a time.
Add alternating the flour, cocoa powder, and baking powder previously sifted with the yogurt.In a few minutes, the chocolatey dough is ready! It is dense and full-bodied! It must be so! Add the pieces of chocolate or chips (keeping aside 2 tablespoons of chocolate pieces to decorate), and the salted caramel chocolate chips, and mix well.
Preheat the oven at 180ºC and line a springform cake pan with parchment paper.Peel the pears. Cut them into slices. As you prefer, thin, large, 4 - 5 parts are fine too!The important thing is that the pears are nice and firm! Pour the mixture into the prepared cake pan.Add the pears to the surface, forming circles: the trick to having a chocolate cake with a beautiful decoration is not to sink the pears too much on the surface! Some you push them deeper, others you leave them higher. Finally, add a handful of chocolate pieces or chips previously kept aside from the total and the walnuts.
Bake in the preheated oven at 180ºC for 40 to 45 minutes. The time is indicative and can change depending on the oven!Please do not open for the first 30 minutes, then evaluate.The chocolate cake with pear and walnuts is ready when a toothpick inserted in the middle of it will remain dry with only a few crumbles on it!Remove from the oven, take it out from the pan after 10 minutes and let it cool.
Notes and Variations:
Instead of chocolate chips, you can use pieces of chocolate! You can flavor the dough with half a teaspoon of cinnamon or add a little orange zest. For the sweet tooth, add a handful of chopped hazelnuts or sliced almonds together with the dark chocolate! If you don't have oil at home, you can use melted butter in equal quantities. The only recommendation for the success of this dessert, use firm and turgid pears and ingredients at room temperature!
