Peel the oranges, eliminate all the skin, and cut them into slices. Deseed the pomegranate. Cut the dates in half and the roasted chicken breast into small pieces. Combine all the ingredients in a large bowl, add the rocket, almond flakes, and mix.
For the dressing, mix the orange and lemon juice in a small bowl with a drizzle of extra virgin olive oil and a pinch of salt, then add the zest and thyme leaves.
