Chicken and Date Salad

Ingredients
  

  • 600 g roasted chicken breast
  • 150 g rocket
  • 2 oranges
  • 1 pomegranate
  • 8 pitted dates
  • 30 g almonds flakes
  • edible flowers (optional)

For the dressing:

  • juice from ½ orange
  • juice and zest from ½ lemon  
  • a drizzle extra virgin olive oil
  • salt & pepper

Instructions
 

  • Peel the oranges, eliminate all the skin, and cut them into slices. Deseed the pomegranate. Cut the dates in half and the roasted chicken breast into small pieces. Combine all the ingredients in a large bowl, add the rocket, almond flakes, and mix.
  • For the dressing, mix the orange and lemon juice in a small bowl with a drizzle of extra virgin olive oil and a pinch of salt, then add the zest and thyme leaves.
  • Put all the ingredients on a plate, season them with the prepared dressing, complete with plenty of freshly ground pepper and edible flowers if you wish, and enjoy.
