During the holiday season, sweet bread with raisins and cinnamon is a classic for breakfast, with it’s sweet aroma of spices filling your home as it bakes in the oven. It’s the sweet smell of Christmas and adds an extra touch of festive cheer to the house. Of course, sweet bread doesn’t just have to be enjoyed at breakfast, I love having a slice on hand when I indulge in my afternoon tea.

Ingredients for 1 loaf (approx. 10 slices):

  • 125 ml whole milk
  • 10 g yeast
  • 35 g sugar
  • 1 egg
  • 240 g flour
  • ½ teaspoon salt
  • 40 g butter, softened, cut into small pieces
  • 30 g butter, melted
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ginger powder
  • ½ teaspoon nutmeg powder
  • 2 tablespoons dark brown sugar
  • 30 g raisins
  • 2 tablespoons of passito or sweet wine or orange liquor
  • butter and flour to grease the loaf pan
  • 2 tablespoons milk or melted butter for brushing

Heat the milk in a pan until it is warm but not hot, then remove it from the heat, add the sugar and the yeast into it, and mix to melt it well.

Add the egg and mix again.

Put the flour and salt in a bowl, add the milk mixture and start kneading, by hand or with an electric mixer, for a few minutes until it starts to thicken.

At this point, add the softened butter cut into small pieces, the vanilla extract, and knead again for about 5 minutes: the time to obtain a smooth, soft, elastic, and shiny dough.

Transfer it to a bowl, cover it with a piece of film and leave it to rise for 30 – 40 minutes until it doubles in volume.

Put the raisins in a bowl with the passito, sweet wine, or orange liquor and cover with a bit of boiling water, then let it sit for about 15 – 30 minutes.

Meanwhile, combine the cinnamon, ginger, nutmeg, and brown sugar together in a small bowl, and set aside.

Turn on the oven to 180°C and prepare a buttered and floured loaf pan.

Transfer the leavened dough to the work surface and roll it out with the rolling pin using a handful of extra flour to keep it from sticking. You need to get a rectangle about one cm thick.

Brush it with the melted butter, add the sugar and spices mix on top, and add the well-squeezed raisins.

Roll up the dough, then cut this sausage into 7 / 9 pieces and arrange them upright in the prepared loaf pan.

Brush the surface with a bit of milk or melted butter, how you prefer.
