Made with only a few ingredients, this creamy and smooth cauliflower hummus is perfect as an appetizer or as a grab-and-go meal.

I love hummus because it is so versatile and can also be made from other veggies and legumes, not only chickpeas. Can serve this hummus with a variety of veggies, but it is so good that you can also eat it with a spoon.

What is hummus?

Hummus is a spread or a dip made usually from cooked chickpeas mashed with tahini, lemon juice, garlic, and oil.

In my version, I have skipped the chickpeas and used cauliflower instead, and it is absolutely delicious.

Cauliflower is very rich in water, more than 90%, but with a significant energy value, 25-30 calories for 100 g, and 2% protein. It has good content in vitamin C, potassium, phosphorus, and calcium. It has a high fiber content: 9.6 per 100 kcal.

Ingredients:

  • 100 g cauliflower
  • 1 tbsp tahini
  • 1 small garlic clove
  • 1 tsp lemon juice
  • a pinch of salt
  • 1 tsp paprika
  • 1 tbsp extra virgin olive oil

How to make Creamy Cauliflower Hummus Recipe Step-by-Step

Cut the cauliflower into small pieces, place them in a microwave steamer, and steam them until soft, about 4 to 5 minutes.

Creamy Cauliflower Hummus

Let the cauliflower cool for a few minutes, add it to a food processor bowl, add the tahini, smashed garlic clove, lemon juice, salt, and paprika, and pulse until smooth and creamy. 

Leave in the refrigerator to cool completely.

Drizzle with extra virgin olive oil and a little bit of paprika or sesame seeds, and serve with fresh veggies like cucumber, carrots, celery stalks and bell peppers.

Can I have this cauliflower hummus if I’m on a low-carb diet?

Yes, of course. Usually, the hummus is not low carb because of the chickpeas, but if you skip the chickpeas and use the cauliflower instead, you’ll get a low carb, paleo, Keto, dairy-free, vegan and gluten-free hummus. 

I want to add that most of the hummus you find at grocery stores has additives and preservatives to improve taste and appearance and extend shelf life. Hummus is so easy to make it at home, just give it a try, and you’ll never go back to the store-bought one.

Can I make this creamy cauliflower hummus recipe in advance?

Yes, of course. You can make as many batches as you want and keep them in the refrigerator in an airtight container for one week.
