5 healthy lunch salad ideas for work

Usually I try to eat different meals everyday. I always prepare and cook just enough for 1 meal every time as I don’t like to have leftovers and is also a good way to avoid food waste.

Furthermore, I would not like to eat the same thing for several days even if sometimes with leftovers you can be really creative and make amazing dishes. 

I don’t know you, but I cannot stay a day without eating veggies. Actually if I think about it, all my daily meals have veggies.

I can easily say that I’m a veggie lover! 

Veggie lover…yep, that’s me 😉

Potatoes, zucchini, broccoli, cauliflower, carrots, leafy greens, artichoke, asparagus, beans, peas, cabbage, cucumber, fennel etc….name them all, I like them all! 

Salads? I can eat salads every single day but sometimes can become boring. To avoid that, I try to change and alternate them everyday. There are so many ways to keep your salads exciting.

Having said this, being closed in the office from Monday to Friday, for me there’s no better lunch than a healthy salad.

Is not only filled with things I like but it also fills me up as is loaded with proteins, flavour and crunch. 

Another thing I like is that having a healthy salad for lunch, it doesn’t make me feel sleepy as you feel after eating a heavy meal, and I can continue with my work without problems. 

Now let’s see how to eat salad every day and like it?

It is very simple: you just need to play with the greens available and mix them with proteins, fibers and a little bit of crunch. 

In this way, everyday you’ll eat a different salad.

As an example let’s see what I had for lunch this week.

Monday

Leafy greens and tuna salad

This is a very easy salad, ready in 5 minutes made with lettuce, radicchio and tuna flakes and for a touch of crunchiness a few pumpkin and sesame seeds and almond flakes. Everything seasoned with a good extra virgin olive oil and that’s it.

Salad made with red and green cabbage, red peppers, carrots, ham and for the crunchiness sunflower and pumpkin seeds, seasoned with extra virgin olive oil.

Wednesday

Red and green cabbage, chickpeas, tuna flakes and sunflower, sesame and pumpkin seeds seasoned with extra virgin olive oil.

Thursday

Herbed chicken breast with fresh romaine lettuce, corn kernels, edamame, olives and croutons seasoned with extra virgin olive oil.

Friday

Romaine lettuce with with carrots, chickpeas, capsicum, Shoyu firm tofu, croutons seasoned with extra virgin olive oil.

My seasoning is almost every time a good drizzle of extra virgin olive oil or sometimes I may add a good balsamic vinegar and I usually enjoy my salad with 1 package of crackers. 

All these salads are way below 500 calories each but they are filling and healthy salads that will power you through any work day

Full of protein and fiber these quick and easy salads are an easy way to keep exciting your lunch everyday. 

The herbed chicken breast I usually cook it during the weekend and I have it ready during the week. 

For the rest, all the salads I make them the night before and pack in a meal-prep container so that I can simply grab it and go in the morning.

  3. Thanks for the tips Ribby! I love veggies but only veggies day after day is boring. There was a time when my husband and I decided to go full salad for a month to lose weight. More than a week into the plan and I was on verge of tears even with variation 😂

    1. Oh no…😖 I know it can be boring, for this reason I’m always looking for different combinations too 😉 and so far is working…but we eat salads only for lunch, then dinner is normal: meat or fish with veggies of course 😉
      Going only with salads for a month I guess is very difficult 😃

  6. I love salad, my Mum taught me to love it back in my early teens. There is so much you can do with a salad and it does make a healthy lunch at work.
    I used to take salads to the office, but even better now due to Covid, I have been working from home for a year, so everything I need is at my fingertips.
    Your salads look delicious. Similar to ones I would create, but I often forget the little things, like sesame seeds etc. Thanks for that idea.

  7. Wow! Wonderful and yummy looking Salads.
    I think such colorful salads can also be made to provide good nutrition to kids, who can otherwise be a bit fussy, although mine are not as fussy as some other kids I have seen.

  8. My favorite salads are tuna-, chichen-, salmon-, and feta salad. Lettuce I don’t really eat, need something more to salad, something substantial what makes it tasty!
