My Rustic Potato and carrot mash

That I am a potato lover I think you know by now, as well that my way of cooking is always easy and fast. 

I do like food and I like to eat well but I don’t want to spend too much time in the kitchen, because I really don’t have that time.

This side dish is made in no time with only 4 ingredients and it gives a nice touch to the plain mashed potatoes.

Ingredients for 2 person:

  • 6 potatoes
  • 3 carrots
  • 1 tablespoon of grated cheese (mozzarella, emmental, cheddar, your favorite choice)
  • 1 tablespoon of butter
  • salt
  • fresh parsley (optional)

Directions:

In general I don’t like to boil the veggies as they loose all their vitamins in the water, but I like to steam them instead so I use a microwave steamer. By steaming the veggies I save time in the kitchen by minimizing cooking time, no more waiting for water to boil since I can steam most veggies in a matter of minutes and I don’t need to go through all of my pots and pans. 

My microwave steamer is a small one, but there are so many options out there and also large capacities for those cooking for multiple people.

Peel and cut in small pieces the potatoes and carrots, place them in the microwave steamer, put it in the microwave and let it cook for around 12-15 minutes or until are tender.

If you don’t have a microwave steamer I advice you to buy one, is really inexpensive and will save you a lot of time, otherwise just proceed as per normal and boil the carrots and potatoes.

Once the carrots and potatoes are soft, place them in a bowl and start mashing them with a fork. I like it more rustic and textured instead of a purée so I don’t mash them too much.

Add the grated cheese, butter and season with salt, mix it well and that’s it.

I like to add some fresh chopped parsley on top but is really optional.

A really great veggie side dish.

  4. I’m a potato lover too and I love this dish. When I was growing up and my mother served potatoes and carrots with a roast, I would like to mash them together but my mother told me, it wasn’t polite. She was worried that I’d go to someone’s home for dinner and do it. Polite or not, I’m glad you like this combination as well. 😊

    1. Back in time parents were very concerned with educations even at the table 🤪 I’ve heard the same thing several times when I was little…they were afraid of how I will behave when visiting someone 🤪
      But you’re right: polite or not, mashing together the potatoes and carrots is a perfect tasty combination 😋
