Quick-Prep Brunch

Mediterranean Diet, Keto diet, Paleo diet, Vegan diet, Raw Food diet, I’m pretty sure it sound familiar, as nowadays people diet for all types of reasons but what we should always not lose track of, is our health.

Honestly I’m not into dieting and I never had a diet in my life but when people hear and see what I eat they say I’m on a diet and I really don’t know why? If I’m on a diet eating everything then what do other people eat?

I eat veggies, meat, fish, seafood, fruits, cereals, nuts, dairy products, pizza, pasta, fries, burgers, sweets….I eat EVERYTHING but and there is a BUT, I never exaggerate with anything. There are more than 10 years now that I have the same weight, it will only vary 1 or 2 kg more or less depending on how many cocktails I drink 🍸 🍹 🍷 😉

I was kidding 🤪 …

… Depending on how much water retention I have …

…(but water retention can be caused by drinking cocktails right? 🍹 🍸 😉)…

…ah, whatever…

If you are into dieting or if you just want to eat healthy, this brunch recipe is simply perfect and ready in less than 15 minutes.


Now let’s see what we need for a brunch for 2:

  • 1 can of three bean salad in water
  • 200 g chicken ham
  • 2 eggs
  • 1 avocado
  • just a few drops of freshly squeezed lemon juice
  • 5-6 cherry tomatoes
  • extra virgin olive oil
  • salt & pepper

How to do it:

Cut the chicken ham in cubes.

In a pan add a drizzle of extra virgin olive oil and add the ham cubes. Roast them for 3-4 minutes then add the tomatoes, cover with the lid and let them cook for 2-3 minutes.

Drain the beans, rinse them under running water then drain them again and add them to the ham. Let them cook for 3-4 minutes then create a little space for the eggs, add the eggs and let them cook with the lid on for 1-2 minutes.

In the meantime, peel and cut the avocado in small cubes and season with just a little bit of freshly squeezed lemon juice and mix well.

Your quick-prep brunch is ready to be enjoyed.

Ingredients

  2. I agree with you. The most important is staying healthy not what kind of diet it is. I don’t have any typical diet too… I was not even aware of anything you mentioned other than vegan haha 😄

      Food is too good to restrict ourselves 😋😋 but as with everything we don’t need to exaggerate 😊
      Hahaha…and I have only mentioned a few but everyday I hear or read in magazines of new diets….everyday somebody will just invent a new one….I’m really puzzled how people can believe all this 🤪

      1. True. Everything too much is bad. Personally I think holding back isn’t good too because we get emotional and that goes straight to physical effect. It’s better to find a good balance and I think you nailed that dear Ribby 🙂 🤗

      2. I agree! I know someone who’s always dieting and sometimes he’s so frustrated that eats lots and lots of food in a short time, like he never had any food in his life 🙀🙀
        Very strange behaviour 😣😣
        Better eat a little bit of everything as in my case 😉🤗🤗🤗
