Hello my dear readers,

Are you a sweet morning breakfast person or do you prefer salted?

I go for both!

My breakfast is made from fruits, eggs and cereals or muffins or cake with cappuccino!

Every morning! I can’t go out without having my breakfast at home!

It is my tradition 😉

Some time ago I’ve shared with you a delicious and easy Blueberries, coconut and yogurt cake.

Since I was pretty pleased with the result, I’ve tried also different variants, replacing the blueberries with what I have at home.

Two in one

Additional ingredient: cocoa

For this variant, I have followed the same ingredients and procedure from my previous Blueberries, coconut and yogurt cake but I did not have the blueberries so I have divided the dough in two and in one I’ve sifted 2 tablespoons of cocoa and the other one I left it as it was.

In the plumcake mold I’ve put first the cocoa half and then the normal half.

And voila!

What I love most is the feel of that lemon zest! Super delicious 😋

Another variant I’ve tried was with bananas.

My kind of banana bread

Additional ingredients: bananas and walnuts

Honestly, is a long time that I’m searching for a good recipe for a banana bread cake but everything I’ve found have too many ingredients, which I don’t have at home and I cannot find now due to the COVID-19 situation. Online deliveries sucks! Lots of items are out of stock.

But I had some ripe bananas at home and I wanted to use them in some way.

So I have tried the same dough from my previous Blueberries, coconut and yogurt cake but adding my ripe bananas this time.

I had mini bananas at home and I’ve smashed 5 but if you have the normal ones you may use 2 bananas.

I have added them to the eggs mixture and I’ve also added a few chopped walnuts, then I’ve followed the same procedure adding the sifted flour and baking powder, baking it at 180 degrees (preheated oven) for about 40 minutes.

I must say that I’m very satisfied with my version of banana bread.

So moist and flavourful and that addition of crunchiness from the walnuts, perfect for my breakfast!

So here you have it! 3 version of the same cake, so your mornings would not be the same.

  2. OMG I just had chocolate chip banana pancakes. 1 egg, 1 mashed banana, 2 tbs flour and chips. Delicious. No sugar,, salt or anything else and they are fabulous. But…I want all the breads you made. They look amazing.

    1. Very true! With a good base you can do lots of variation and every time you have a “new” recipe 😉
