Mouth-watering Homemade nachos

Hello my dear readers,

Well, what do you do in lockdown?

I do 3 main things: working from home, cooking and eating 🤪 regularly 🤪

Cooking and eating is great, the only problem is that I can’t go grocery shopping as supermarkets are almost empty, my pantry is almost empty too so the challenge is what to cook?

I had some ground meat in my freezer but I was pretty low in veggies…a can of beans, one green bell pepper, a little bit of tomatoes sauce…hmmm… 🤔

I have an idea…

Why not making a chili con carne without chilli though…my way 😉

Or say it do it, I guess 😉

Ingredients:

  • ground meat (beef and/or pork)
  • green bell pepper (or any other colour)
  • shallot or onion
  • tomatoes sauce (any kind of sauce)
  • a can of beans (any kind of beans)

How to do it:

In a pan add the chopped shallot and bell pepper, extra virgin olive oil, salt and pepper and let it simmer for 1-2 minutes then add the meat, mix it well and add the tomatoes sauce.

Rinse the jar of tomatoes sauce and add that water too and let it simmer with the lead on at low heat for around 20-30 minutes.

Once is ready add the can of beans and your chilli con carne without chilli is ready 😉

Simple, with just a few ingredients that you may have in your pantry, but definitely tasty 😋

And because was Cinco de Mayo and I was in the mood for some Mexican food why not making some nachos 😉

We always like to enjoy a good aperitif at home, especially on Friday evening after a long week of work, but now why not do it also during the week?

There’s always a good reason to drink something good and enjoy a delicious food right? 😉

What you need for a good homemade nachos is:

  • tortilla chips
  • a meat sauce (can use my chilli con carne without chilli)
  • grated cheese
  • pickled jalapeños (optional)

Place the tortilla chips on a plate, add the meat sauce and grated cheese and microwave it for around 1-2 minutes or until the cheese is melted.

Make sure you cover the plate in the microwave with a lid for microwave use, otherwise you’ll have the meat sauce all over your microwave.

I had at home some multigrain & seeds tortilla chips but you may use whatever tortillas you have. It will be equally delicious 😋

Place some pickled jalapeños on top and your homemade nachos are ready to be enjoyed 😉
