Apple Strudel 🍎

When you are craving for something good but you don’t have time or you’re not in the mood to do it, this is the perfect solution.

Everything that is needed is a few ingredients and a half an hour. This is my kind of quick and easy apple strudel.

The quantity of ingredients need to be adjusted based on how many strudels you want to do. I used 2 sheets of puff pastry, 2 apples, 50g of melted butter, 70g of plain bread crumbs, 50g of sugar, 150g dried fruit (roasted pecans, hazelnuts, pine nuts and almonds), 50g mix of zested raisins and cranberries, 1 lemon, around 1 teaspoon of cinnamon and 1 egg to brush it on top of the pastry.

Mix the bread crumbs with melted butter and stir it to thoroughly coat the crumbs (keep aside 2 tablespoon of melted butter to brush it on top of the pastry).

Peel and slice the apples. Add the lemon zest and the juice from half lemon to avoid the apples to become brown. Add the sugar, cinnamon, the pine nuts, the finely chopped dried fruits and the raisins and mix slowly.

Place puff pastry on a baking sheet. Brush the melted butter on top of the pastry, add the bread crumbs and the apples, roll it up and seal the edges. Whisk the egg and brush it on top of the pastry. Optional add some almond slices for more roasted crunchiness.

Bake at 200 degrees in static oven for around 30 minutes or until golden brown.

    My mum used to make the most amazing apple strudel, but also one with walnut and coffee – to die for. Just wish I could remember how she made all these wonderful cakes.

    1. Thank you 😊 My grandma used to do some amazing cakes too. Unfortunately I don’t have her recipes and always I wonder how she made them so delicious…I think with a lot of love 💕
